Carrots Source Of Vitamin 'A' One medium-sized carrot pro- vides all of the vitamin A re- commended for the daily diet of a normally active man, wo- man or child, say Nutritionists at Macdonald Institute, Guelph. More vitamin A is provided by a cup of cooked carrots than a cup of raw carrots because, due to water loss, it takes more cooked carrots to fill a cup and vitamin A isn't lost in cooking. Vitamin A is stored in the body, so if we take in more than is needed for one day, the body will use it up later. Here is a recipe that will pro- vide a new way of serving the versatile carrot: Fresh Carrot Pie Combine % cup sugar, Vi tea- spoon salt, % teaspoon nutmeg, 1 teaspoon cinnamon, i/, tea- spoon ginger. Add 2 lightly beaten eggs, 2 cups sieved cooked carrots, 1 cup undiluted evaporated milk. Mix thorough- ly and pour into an unbaked 9 - inch pie shell. Bake at 400° F. for 15 minutes; reduce tempera- ture to 325° F. and continue baking until filling is set, about 35 minutes. This filling may be baked in custard cups or in a casserole. Set •. the dish in a pan of warm water and bake at 300° F. un- til a clean knife, inserted into the centre of the custard, will come out clean.
