Honey Apple Roll
"A spicy, fruit -filled pastry
roll adapted from an old Re-
' liari recipe"
• Pastry for a 2 -crust pie
1/4 cup liquid honey • -
1% cups peeled, chopped
apple
% cup chopped dates
3 tablespoons chopped wal-
nuts
1/4 teaspoon cinnamon
% teaspoon cloves
2 tablespoons liquid honey.
Roll pastry out in two rec-
tangles abeut 10 inches by 7
inches. Spread each with honey
to about 1/2 -inch from edges of
pastry. Sprinkle with remain-
ing ingredients. Roll pastry up
like a. jelly -roll and seal edges
firmly to prevent honey bub-
bling out during cpoking. Place
rolls on a cookie sheet and bake
in a hot (425 deg. F.) oven un-
til golden brown, 25 to 30 min-
utes, Spread remaining 2 table-
spoons of honey over top of
cooked rails. Serve warnt top-
ped with whipped cream or ice
cream. Six .servings.
Note: To make a richer pas-
try use •Y4 cup butter in place
of 1/2 cup of the shortening.

six hungry people.
Peachy Chicken Casserole
3 whole chicken breasts or
6 legs (about 3 Ilia.)
1 teaspoon salt
14. `teaspoon pepper
1 teaspoon paprika
2 tablespoons butter
lA cup chopped onion
2 tablespoons flour
1 can (20 -ounce) peaches
1 chicken bouillon cube
1 package (12 -ounce) froz-
en peas
4 strips fried crumbled ba-
con (optional).
Cut chicken in serving -size
pieces and sprinkle with salt,
pepper and paprika. Brown a
few pieces at a time in melted
butter over medium heat. Drain
on absorbent Paper. Pour off
any excess fat, leaving about 2
tablespoons- in pan. Add onion
and saute until transparent,
about three minutes. Stir in
flour and blend with pan drip-
pings. Drain peaches and, if
necessary, add enough waterto
the syrup to make one cup
Gradually Pour syrup into pan,
add !Anion cube and cook,
stirring constantly until sauce
is smooth and thickened.
Place chicken in a greased
casserols,' pour sauce over it,
cover and bake in a moderate
oven (350' F.) until chicken is
almost -tender,. about 45 min-
utes. Add peas and continue
baking 15. minutes longer. Ar-
range peach halves on top of
chicken, return to oven until
peaches are heated, about five
minutes. Just before serving,
sprinkle with crumbled *on,
if desired. Serve with buttered
noodles. Six servings.
Buttered Noodles - Follow
the instructions given on the
package.' Season to taste with
salt and pepper and add a gen-
erous portion of butter.

Ron Saville Construction was
awarded .the contract for build-
ing the bridge on sideroad 10-
11, con. 9, for. the sum of $9,-
342.00, being the lowest of five
tenders. Council was informed
that the west abutment of the
Tubb bridge was giving away
and the road superintendent
was instructed to contact B. M.
Ross, P.Eng., Goderich, to ex-
amine it and have plans drawn
for a new bridge. A by-law was
passed,Jimiting the weight pass-
ing over the bridge to 14,000
pounds.
There being no appeals on
the Reaney-Shaw, and Hille-
brecht Drains, the court of re-
vision was dispensed with.
There being one appeal on the
Melville Drain, -court of ' revi;
sion was\ held and the appeal
disallowed'and the court of re-
vision closed. The by-laws an
the- above drains were passed
and ...the contracts awarded as
follows: Melville, to R, Nichol-
son & Son for $2,725.50; Rean-
ey-Shaw to Fred Kistner for
$2,960.90, and the Hillebrecht
to Hanna Construction, Listow-
el, for $845,00.
A by-law setting up a credit
for $300,000,00 for tile drain-
age loans was given first and
.secend readings and will 'now
have to go to the Ontario Muni-
cipal Board for approval. Road
accounts totalling $3,805.02 and
general accounts amounting to
$3,617.22 were ordered paid.
