Riders from across Southwestern Ontario RECIPE OF THE WEEK PEANUT BUTTER CARROT LOAF 1 cup (250 mL) firmly packed brown sugar 'A cup (125 mL) creamy peanut butter 'h cup (125 mL) corn oil 2 eggs 2 cups (500 mL) fineqly shredded carrots 1% cups (425 mL) finsifted flour 1 'tsp (5 mL) baking powder i tsp (5 mL) baking soda 'h tsp (2 mL) salt I tsp (5 mL) ground cinnamon 1 tsp (5 mL) ground nutmeg ' ' cup (125 mL) milk 1 tsp (5 mt) vanilla Grease 9xSx3 inch (2 L) loaf pan. in a large bowl mix together brown sugar, peanut butter, corn oil, and eggs until creamy. Add shredded carrot. In a small bowl stir together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stirtogether milk and vanilla. Add flour mixture to peanut butter mixture alternately with milk in three additions beginning and ending with flour. Turn into prepared pan. Bake at 350°F (180°C) oven 1 hour or until inserted knife comes out clean. Cool 10 minutes. Remove from pan. Makes I loaf.
