RECIPE OF THE, WEEK
1'RESH STRAWBERRY GLACE PIE
I baked and cooled 9 -inch (I L) pie shell
1 cup (250 mL) whipping cream. divided
I pkg. (250 g) softened cream cheese
cup (75 mL) granulated sugar
tsp. (1 mL) grated lemon rind
4 tsp. (20 mL) lemon juice
b cups (1.5 1) fresh strawberries
2 Tbsp, (30 mL) corn starch
E/. cup (175 mL) granulated sugar
Ih cup (75 mL) water
1 Tbsp. (15 mL) icing sugar
Wh;p'6 cup 1125 mL) of the cream dntil stiff;
set hside: Beat cream cheese until smooth;
beat in V.1 cup (75 mL) granulated sugar,
lemon rind and juice. Fold in whipped cream.
Spread over bottom of prepared pie shell.
Chill well. Wash and hull berries. Crush
sufficient berries to yield 1 cup (250 mL). Let
remaining berries dry. Combine corn starch
and 3/. cup (175 mIJ eranulated sugar in a
small saucepan; blend in crushed berries and
water. Cook over medium heat, stirring
constantly, until smoothly thickened. Cover
and cook over low heat, stirring occasionally 2
to 3 min. longer. Press mixture through a
sieve: cool. Carefully fold remaining whole
berries into strawberry mixture. Heap glazed
strawberries onto cheese filling. Spoon any
remaining glaze over berries. Chill. Combine
remaining'/, cup (125 mL) whipping cream
and icing sugar. Beat until smooth . Garnish
pie. Makes 1 pie.

winning over McNichols 8.7.

Canada is a "big country with
big lakes,"says Austrian Visitor
A 16 -year-old Austrian girl is a long way
from home this summer, Bettina Kissner, of
Vienna, Austria, is a guest .for six weeks at
the home of Peter and Margaret Bannon,
Seaforth.
Bettina arrived in Canada on July 5, Tess
than a week after Mr. and Mrs. Bannon
returned from a'inonth-(ting trip to Britain.
The couple know Bettina through a family
connection; their son-in-law comes from
Austria.
Bettina's mother asked Mrs. Bannon last
year if she could arrange an exchange
whereby Bettina could stay with a family in
the Seaforth area and in return, that family
could send their child to Vienna to stay with
the Kissner family. But Mrs. Bannon said she
received no response from her notice in the
paper. And when Mrs. Kissner suggested
that Bettina stay with them, the Bannons
eagerly agreed.
"1 wanted to see another country," says
Bettina as a reason for wanting to visit
Canada. She has previously travelled to
Germany. Switzerland. Italy, and North
Africa. She didn't know much about Canada
before she arrived, but she did know it was "a
very big•country with big lakes."
"I thought the weather would be better."
she says. But the Bannons have assured her
that her first week here was not typical of the
warns Canadian summer weather.
"It's a big change from Vienna to
Seaforth." Vienna, she says: is a large,
bea„rf,n °',d ntr1 city with a population of one
and a half million.
A week is not a long time to gain lasting
impressions, but Bettina. says Seaforth is
"small, but nice. And 1 like it." Vienna is
always very loud, she says, and she likes the
quiet of a small town.
While in Canada, Bettina plans to visit
' Niagara Falls, Toronto, and stay in cottages
in Orillia and Huntsville. She would also like
to travel to Ottawa.
While she stays in Seaforth, it would be
nicer for Bettina if she could befriend
somebody her own age, who could show her
what Catadian girls are like, if indeed they
are different from girls anywhere else, says
Mrs, Bannon.
When Bettina returns to Vienna, she wijl
have two more years of high school, after
which she plans to study art in one of
Vienna's universities.
Another reason for coming to Canada, she
says, was to improve het English, but she
already has an excellent command of the
language. She has studied it for eight years at
school, and although she has problems
understanding when people are speaking
quickly, she herself speaks quite clearly with
that deeper awareness of proper grammar
common to people who are learning a
language through textbooks.
But certainly when she returns home to
Austria next month, Bettina will be more
fluent in English, and probably better
acquainted as well with that "very big
country with the big lakes.
