BANANA AND ORANGE MERINGUE 1 cup sugar 2 eggs 4 ripe bananas 1 cup orange juice I pinch salt Skin, scrape and slice the bananas into ramikins or an earthen bowl. Beat the yolks of the two eggs, two-thirds cup of sugar and salt together ; then add the orange juice. Pour over the sliced banana. ; set the ramikins in pan of hot water in moderate oven twenty-five minutes, or until set. Beat the whites of the two eggs until dry with one-third cup sugar. Spread over the top of the banana ; dust with pulverised sugar ; place in moderate oven to dry and brown slightly. This makes six ramikins.
