. RouLli on The Mole.
In Staffordshire and Shropshire,
England, they have a most extraordin-
ary cure for toothache. The sufferer
watches a inole's runway with spade
and traps, acid, as soon as he succeeds
in capturing one of these reputed eye-
less little animals, cuts off its paw and
quickly applies it to the aching molar.
In order to make the cute sure and
.effective, the paw must he amputated
while the mole is yet alive ; further-
more, if the aching tooth is on the
right side of the jaw, a left -hind mole
paw must be used, and vice versa. A
similar toothache superstition exists in
the Cape Verde Islands and also on
the Canaries.

froth, add the strawberry juice and
sugar; mix carefully, turn into an.iee

bind the point with a strip of buttered
muslin, pack in salt and ice and freeze
three hours. The above will serve
eight persons.
Baked Mutton Chaps. -Beat and
trun the chops, roll each one in beaten,
egg, and then in dried bread crumbs ;
put them in dripping pan, with a
small lump of butttr on each one. Set
in the oven, and as they brown, haste
every few minutes with hailing -water
and a little melted butter. When nut-
brown, keep them hot, sprinkled with
pepper and salt, while you thicken the
grayy left in the pan by adding brown,
flour and a few tablespoonfuls of
tomato catsup. Pour over the ehops
and serve.
Tomato Salted. -Take as many firm,
ripe, round tomatoes as there are per-
sons to serve. Pour over thein boiling
water, remove the skins and place
tomatoes on ice. Chop fine two'Snions
and grate a cucumber. Mix these in-
gredients, after salting and -peppering, •
with a small quantity of thick may-
onnaise dressing. Scoop out the cores
of the tomatoes and fill with the mix-
ture. Place, op lettuce 'leaves, and
pour over the red tomatoes the golden
dressing. This makes a nice course
served with wafers or cheese straws.
Chiclten, it la Tomate.-Cut a good
sized fowl into twelve or fifteen pieces,
place them in a saucepan, with some
pepper, salt, and a half dozen tomatoes,
add a piece of butter the size of a wal-
nut, half a glass of milk, half a pint of
good stock, parsley and a bay leaf ;
cover the saucepan, and let the whole
stew for an hour and a half. When
cooked serve the chicken in the centre
of your dish, place the tomatoes round
it, and pour over all the strained gravy.
Fish Cutlets with Tomato Sauce. -
Take any large firm fish, bone, skin
and slice into cutlet shape. Sprinkle
with pepper and salt; dip each cutlet
first in grated crochet., then in sweet
milk and egg beaten together and again
in the cracker meal. Fry in hot hat-
ter. When done up, arrange on a
dish, and pour tomato sauce around
the cutlets. Serve very hot.
Pot -,iter Cakes. -To thoroughly mash-
ed potatoes add. salt, Nutter, a little
pepper and sufficient milk to moisten
slightly. Before perfectly cold add a
heaten.egg, mixing. well. Shupe into
flat, round cakes and put away to cool.
When ready to fry, roll in flour
and fry in hot butter. Turn careful-
ly with a board blade and brown the
other side. Serve hot at once.
Creamed Oysters. -Pu' twenty-five
oysters in a double boiler for ten
minutes, or until the gills curl. Drain
them and save one gill of liquor. Put
two ounces of good sweet butter into
a sauce -pari ; when melted, add two
even tablespoonsful of flour, mix with-
out browning; add one gill of cream
and the gill of oyster liquor; stircon-
stantly until it boils, add rt half teas-
poonful of salt, a dash of white pepper
and the oysters. When very hot,
serve.
Sauce for Cold Meat. -An excellent
sauce to serve with cold meat is made
from grated horseradish, yolk the
of an egg and whipped creatn
Squeeze every particle of vinegar
from . three tablespoonfuls of the
horseradish and prix thoroughly
with the yolk of an egg and a
half teaspoonful of salt. Add
six tablespoonfuls of whipped cream
and tnix again. Serve on a small dish
by itself, or put on a platter with cold
meat or poultry, arranging the slices
about it with a border of parsley.
Milk for Babes. -If care is taken in
procuring pure milk from a healthy
cow it will answer every purpose -
provided the milk is kept clean and
free from germs. Many careful house-
keepers cannot realize how very
great must be the care exercised
with milk. It should never be used
unhoiled. Dr. A. Jacobi, a recognized
authority, in a recent article says :
"After having been boiled, the niilk
destined for the use of a baby dur-
ing the day ought to be kept in
clean bottles, containing from three to
six ounces, up to the cork, and the
bottles turned upside down and pre-
served in a cold place. Such at bottle
will keep longer than milk preserved
in the usual way. Before being used,
it ought to be heated in a water hath.
By repeating this heating of the whole
amount of the day's milk several times
during the twenty-four hours, ferment-
ation with be retarded, and digestibil-
ty improved." Womankind.
SOMETHING USEFUL TO KNOW.
Here is a set of rules that are given
to the girls that attend the public
school cooking classes, and they are
good enough fot all the present and
prospective housekeepers to cut out
and paste in their housekeeper's scraps
book .-
Accurate meltsurenlent is necessary
to ensure success in cooking.
All dry materials should be sifted
before measuring. •
A cup holding jest half a pint is the
standard measuring -cup. A cupful
is all the cup will hold without run-
ning over, -toll to the brim. A scant
cupful is within a quarter of an inch of
the top.
A tablespoonful of flour, putter, or
sugar is a rounded spoonful.
A teaspoonful of salt, pepper, or
spice is a level teaspoonful.
A heaped spoonful is all the spoon
will hold.
Half a spoonful is measured by divid-
ing through the middle, lengthwise.
A speck is what you can take on the
tip of a penknife.
These bits of information seem very
simile, and yet you would he surprised
to learn -how few, comparatively, have
ever heard of them.
Chicago Advance. The Sunday
papers have already done much to
lower the tone of Sabbath observance,
and they will do more. Railway trains
have their Sunday schedules and in-
ducements to travel : and the number
of Christian people who plan to start
on journeys of business or pleasure on
the Lord's Day is constantly increas-
ing.
