HEAD OFFICE: Parliament Buildings, Toronto HONOURABLE DANA PORTER Treasurer of Ontario The modernized town building, which today serves the citizens of Seaforth, is a far cry from the conditions that existed a hundred yearsago when Seaforth had its beginning. The story of that beginning is told in the Huron Atlas of 1879. Referring to Seaforth, the Atlas says: This flourishing incorporated town may be justly described as one of the most prosperous and progressive of 'a section of coup- try where prosperity and progress have been the order of the day. Not many years agog and within the memory of even the "rising generation," the spot which now marks the existence of this centre of trade and industry—now one of the most important 'places, in a commercial point of view in Western Ontario—was a dense and almost impenetrable forest, echo- ing back the scream of wild fowl and the croak of reptile, the only inhabitants of what has since then been transformed into the beauti- ful embryo Seaforth we now see it. Without any natural advantages of position, and with the actual disadvantages of what was in the early days considered an inferior tract of land—from being compar- atively low, and` therefore more difficult to bring under the subjec- tion of the husbandman—this spot was passed by unheeded by thou- sands who, to use a common ex- pression, "went further to fire worse." Its lowness constituted a serious impediment also to any approach to a "settlement" at this point; and other " places grew apace, and prospered too, on all sides, and within such easy dis- ances, that none ever dreamed bf a great future' in store for th'e "Guide Board Swamp," as the place was familiarly known, from the fact that there them stood for many years at the "four corners" a post and fingerboard, pointing towards Egmondville, Aitileyville (now Brussels), and Goderich, showing the direction and number of miles to each place. The first who ever had the cour- age to settle in "the swamp" was Andrew Statue, who located on Lot 26, Con. 1, . McKillop, at an early day in the history 'of that township. He made a clearing and built a log -house on the southeast corner of the lot, which was the first and for a great many years the only- human habitation on what now comprises the Town of Seaforth. At a very early day, Lot 11, Con. 1, in Tuckersmith, was purchased from the Canada Company by .one McGregor, who took up his resi- dence further west on the Huron {Road, beyond Harpurhey, clearing some. 10 'acres, however, on the' corner . where Carmichael's hotel now stands; and after this amount of improvement was made upon the place, he offered the whole hundred acres for $450, without a purchaser for a long time., Shortly after this, Andrew Mc- Kearnan, an Irishman, purchased three acres on the northeast cor- ner of the lot, 'and erected a log tavernon the very spot now occu- pied by Carmichael's hotel. This was the second habitation and the first public -house in the 'place. The above two houses were the only ones ,here till the inauguration of Buffalo, uffalo, Brantford and Gode- rich Railway, afterwards the Buf- falo and Lake Huron. About this time great activity was evinced in speculation in lands in the vi- cinity of the supposed line of the proposed railway. Under this ex- citement, the balance of ,1VcGre- gor's lot was purchased frofn Mr. Sparling by Messrs. Patton, Ber- nard and LeFroy, professional men from the east, who at once sur- veyed .the whole lotinto a town plot, and through whose enterprise Seaforth received its first impulse. ONTARIO TURNIPS PROVIDE GOOD SOURCE OF VITAMINS As each season arrives it brings its own particular food delicacies, and with the coming of autumn there is once again an excellent supply of Ontario yellow turnips or rutabagas which the fall frosts have mellowed and brought to full flavor. The turnip is an economi- cal food and when properly cook- ed contains large quantities of-Vit- amin f Vit- amin C, as well as other vitamins and minerals. The Nutrition Section,. • Home Economics Service, Ontario De- partment of Agriculture, advises that the best method is to pre- pare the vegetable immediately. before cooking, cut into half-inch cubes, drop into a small amount of rapidly boiling water, cover closely and boil gently only until crisp tender — to 12 minutes. Use any liquid that remains in soup or gravy, season the turnips, add a bit of butter and a little brown sugar. if desired, and serve at once. This method ensures fine flavor, pleasing texture and the retention of much of their Vitamin C content. Since 1941 the number of horses on Canadian farms has decreased from 2,789,000 to about 800,000. • CONGRATULATIONS!
