Keeping Butter.
In View of the immense amount of
poor butter annually marketed, any-
thing which ie information as to the --
best method a Making and -keeping this
product ought to be read with attention
and interest by car butter makers. The

without deterioration is to have it pro-
perly made. The following from the

brine. Mr. JaMeson would add more
brine if necessary, and then weigh tile
butter down to prevent it from floatilig
in the, tub. I once had a neighber who
would pack this butter as soon as Re
made it, coyer it with brine and then
put a blookfof wood under the cover bf
each tub to keep it from floating, but he
soomohanged hilt practice. I knew an-
other deiryman! who _claimed to have

cisterns with br ne, and put his butter
into theta as he made it, and in the fall
packed into tub and sent it to market,

one year. Butter. that has been kept in
brine, whets expOsed to the air very soon
becomes rancid:: The tubs cannot be
sent to market flied with brine. The
buyer is obliged to turn off the brine to
find the tare. 1 The commiseion man
will not be at the trouble of brining the
bntter the second time. The consumers
do not wish to be at the trouble of keep-
ing a pickle for the little packages of
butter they purehase from time to time.

ed, with muslin or tissue paper would
not be improve in appearaece by being

"The second method of packing butter
to keep is as follows : After churning
and well workiog the salt iuto the butter
with as little handling as possible, then
set the butter aoway in a proper place
for twelve or twenty-four hoars. The
salt becomes -dissolved, the butter
change e color and condition, and then a
very little pretattre will bring it into a
dry, solid, waxy texture. Next pack
the butter solidinto tube, properly pre-
pared, patting a aleth over the top and
over that spresaling a paste of salt.
There being but little moisture the sett
on the sgrface does not diseolve but
crystallizes, and will remain almost iun
tact through the season. Place a. close -
fitting cover anol set it in a proper place
for keeping, allci it need not be opened
until it reaches the consumer.
"For eearly twenty years I made but-
ter for one firm end have shipped hun-
dreds of packages prepared as above
without opening them at the time of
shipment. Since there was little or no
brine in the tabs, and the packages
being of a, waif aro size there was' ho
difficulty in estimating the tare. I con-
fess that in mis method of making aucl
eelling butter i never had ranoh ex-
perience in keeping iton my own hands;
in fact,. I canine t receliect of ever keep-
ing a tub for ,a fall year, yet the old
gentletnten, who purchased my butter
during ao IIIaq year', frequently in-
formed me that he sent paekages to
California, to St. Louis and to Washing-
ton, D. C., and that it always kept well
and without complaint,"

How a Man Sews on a Button.
Did you e.veti see a man in the soli-
tude and privacy of his study attempt
to sew a button on by himself? In all
its details one ef the most interesting
perforinancee in the World. First he
hunts for a bueton. Generally to secure
it he robs Peter to pay PauI, and cuts
one from another garmeet. This may
be MIleit larger or much smaller than
the size he is wearing. Next he hunts
& needle. Probably he goes out and
buys &paper of needles. He always
chooses the latgest needles, having the
impressiou that laifge needles will sew
stronger than Isna411 needles. As to
thread, he gets! thecoarsest he can find;
this he doublewhen he would thread.

one baud and his coarse black thread
in the other. He bites off the
thread to the desired length. He then
tries to twist it to a fiue point. Gen-
erally iu this he succeedin making
two, and. s iroeitimes three fine points on
one end. Of courae he can't get all
these points through the needle's eye at
once. He tries hard to make the
needle and threa,d get on friendly terms
with each other, but they won't. They
don't want to I get acquainted. They
¬ wait to have anything to do with
each other. Semetimes it is the needle
that kicks sontetimee the thread. Some-
times he really imagines he has thread-
ed his needle.1 itis an ocular delusion. -
The thread has missed the eye by a
half an mci. It is harder than sawing
wood.
At last the eeedle is threaded. New
he tries to eciV the button on without
taking his trousers off, This proves a
failnre. He twists himself in an un-
comfortable position, and so -would sew.
But he can's este so. Eft) runs the
needle into hireself. And the contrary
thread always insists on fouling or
doubling toiled the next button. Then
one part of the double thread won't

part. One part draws through the
button's eye fie st, and leaves Ma& other
part behind. Then he gets hitched up,

angel knows what is going on in. him,

saws hard, ge, has forgotten all about
the necessity for a thimble. He jams
his thumb down on the needle's head,
aid it punctures his thumb or runs un-

' KENDALL'S SPAVIN CURE 1

Early last summer Messrs. B. J. Kendall & Co., of Euosburg Falls, Vermont,
made a contract with the publishers- of the Press for a half column advertise-
ment for oue year rettieg forth the merits of Kendall's Spavin Cure. At the
same time we secured from the firm a quantity of books, entitled Dr. KeridalPs
Treatise on the Horse and his Diseases, which we are giving to advance paying
subscribers to the Press as a premium. '
About the time the adyertisernent first appeared in this paper Mr. P. G. Scher-
merliorn, who resides near Colliers had a spavined horse. He read the advertise-
ment and concluded to test the efficacy of the remedy, although his friends
laughed at his credulity. He bought a bottle of Kendall's Spavin Cure and coin-
menced usiog it on the horse in accordance with the directions, and he informed
us)this week that it effected such a complete cure that an expert horseman, who
examined the animal recently could find no trace of the spavin or the place where
it had been located. Mr. Schermerhorn has since secured a copy of Keudall's
Treatise on he Horse and his Diseases,vvhich he prizes very highly and would be
loth to part !with it at any price, provided he could not obtain another copy. So
