of oat -cake has recently led to the expos-
ure;6f different kinds of it for Sale in -
,bakers and other shops, particularly in
Scotland. ! - .
The grain of oats intended for human.
. food is generally prepared. by being
- grounelinto meali, although it is also used
in the form of crroats—that is, of grain -
denuded. of itsluisk, whet "'lately bfaken
into fragments. ptea1 is of two kinds
--both common In all shops in which it

meal. For various Purposes some prefer

differenCe in quality, but merely in the

Oat -meal is p incipally usecl in. two
'ways,- for the making of porridge ancl cif
oat cakes Porrdge_ is a principal art-
icle of food of he 'Scottish peasantry,
generally accoini anied with milk, when
milk can be obtained ; although when
milk is scerce butter is sometimes used,
sometimes sugar., ana sometimes treacle -
beer. For most people, in a sound col -
clition of health, there is no more whole-
some article of food than porridge and
milk, none thatcmitains a larger pro-
portion both. of flesh- forming and. heate:
producting substances ; while to almost
all who have ever been accustomed to its
use, it is extremely palatable. Generally
speaking, thereis no better article' of
food for the nursery, none more likely to
maintain a healthy condition of the 8t0111"
ach, or to give vigor to the frame.; al-
though there are ex.eeptional cases, both
among the young and. among adults, 'in
which the use of porridge is unsuitable,
producing painful distension of the stom-
ach and. indigestion: While the -caprices
of children ought not to be heeded in
such a manner, the actual conditions Of
their constitutions eught to be carefully
observed ar...d. regarded. Porridge is, in
general, rnacle by eieiply boiling oat -meal
ha water, stirring au the while to prevent
singeing, and to secure the thorough mik-
tnre of the meal and water into a homo-
geneous mass; without knots. The .
quality of porridge very much depends
on the amount of belling which it receives...
Tt cannot be too thoroughly heeted. Im-
perfectly boiledoet-meat porridge is a
very coarse article of food, and anfortutie
ately, much of the porridge Used is of
this character; and the porridge prepared
for the nursery is often no better, through;
the carelessness at the servants who
,wish to get through their work with as
little troeble as possible. It is not near-
ly se digestible, and therefore not so nu-
tritious, as porridge really well made. A
common mistake in the making of por-
ridge must oleo he here noticed°, as tend-
ing much, to the deterioration of its qua-
lit'py, the adding of meal by CLegrees while
the boiling goes mei-until theproper thick-
ness is a.cceaired ; the result belieg that
part of the meal is imperfectly ailed.
The cook ought toknow the proper pro-
portions of Meal and .water ---knowledge
not very difficult to acquire—and mix
them at once, so that all the meal may
be equally well boiled. But it is to be
observed -that the water must be boiling
before the meal is put in, which is not t
be introduced in a mass, hut, as it were,
strained threugh the fiugers, handful b
handful, as quickly as possible; •
