DATE SQUARES
CAN'T HONESTLY REMEMBER WHEN I STARTED LIKING DATE
SQUARES BUT I KNOW I REALLY LIKE EATING THEM NOW. I
LOVE TO PUT IN A FEW DIFFERENT TWISTS TO MAKE PEOPLE
GUESS WHAT THE HINT OF AN INGREDIENT MIGHT BE. HERE
IS A GREAT DATE SQUARE RECIPE WITH ONE OF MY NEW
IDEAS!
2 cup chopped, pitted dates
water to cover
juice of half an orange
1-1/4 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup margarine
I - I /4 cups rolled oats
3/4 cup brown sugar
peel of one orange
Put dates in a small pan with water to cover and the juice of
half and orange and heat to boiling. Turn heat low and
simmer till thick as jam (at least 10 minutes). Cut margarine
into flour, baking powder and soda and salt. Stir in oats and
sugar. Grease an 8 inch square pan and spread 1/2 crumb
mixture in pan. Cover with dates. Spread top crumb layer
over date mixture lightly. Bake in 350 degree oven about 25
minutes till lightly browned. Cool in pan and enjoy eating a
super date square!!
