Autumn dessert
A rich and tasty dessert
developed by food specialists
at the Ontario Food Council,
Ministry of Agriculture and
Food, makes good use of an
autumn fruit—the Ontario
apple.
Don't forget that dab of whip-
ped cream or vanilla ice cream.
It makes the dessert extra
special.
APPLE PASTRIES
3/4 cup soft butter
3/4 cup sugar
2 eggs
3 cups sifted flour
3/4 tsp. baking powder
1/2 tsp. salt
6 cups finely chopped apples
1 cup raisins
1 cup sugar
1/4 cup flour
1 tsp. cinnamon
1/4 tsp. nutmeg
3 tsp. butter
Icing sugar
Cream 3/4 cup butter. Add
3/4 cup sugar gradually and
continue creaming until fluffy.
Beat in eggs one at a time.
Sift 3 cups flour, baking powd-
er and salt together and add
about half to creamed mixture.
Blend well with a spoon. Add
other half of dry ingredients
and blend. Knead to a ball and
wrap , in waxed paper. Chill
several hours. Combine apples
and raisins. Mix 1 cup sugar,
1/4 cup flour, cinnamon and
nutmeg, and toss through fruit
mixture.
Cut chilled dough into 4
equal pieces. Roll one piece
into an oblong just to fit bottom
of 13 x 9 x 2 -inch baking dish.
Line bottom of baking dish with
dough, sprinkle with 1/3 of
fruit mixture, dot with 1 tbsp. of
the butter. Repeat these layers
of dough, fruit mixture and but-
ter twice more and top all with
a final layer of dough. Prick
top layer of dough several times
with a fork. Bake at 350 degrees
F for 45 to 50 minutes or until
pastry is well browned and
apples are tender.
Sift icing sugar over warm
pastry and serve cut in squares.
If desired, top with whipped
cream or ice cream.
Make 9 to 12 servings.
