Obituaries
R. AARON ERB
A highly respected resident
of Stanley Township for many
years, R. Aaron Erb passed away
at South Huron hospital, Exeter,
on Friday, November 26, in
his 79th year, He had been a
patient at the hospital for some
time.
Born in Hay Township on
February 23, 1893, he was a son
of the late I\'lr. and Mrs. John
Erb. His wife, who survives, is
the former Veronica Gerber.
Also stuviving are three sons,
Gordon, R, R, 2, Zurich; Leroy,
R.R.1, Zurich, and Elarold,
R, R.2, Zurich; one daughter,
Miss Dorothy, R. R, 2, Zurich;
two brothers, Moses, of Zurich,
and Edmund, R. R. 2, Zurich;
one sister, Mrs. Aaron (Sarah)
Gingerich, R. R. 2, Zurich.
There are also 10 grandchildren
and 13 great grandchildren.
Funeral service was held at
the Westlake funeral home,
Zurich, on Monday, November
29, at 2 p. rn„ with interment
in the Blake Mennonite Church.
Rev. Cyril Gingerich officiated.
Pallbearers were Stephen
Gingerich, Roy Erb, Albert Erb,
Curtis Gingerich, Harry Baechler
and Keith Gingerich,

MISS MARY JOHNSTON
A former resident of this
area for many years, Miss Mary
Ann Johnston passed away at
Kenabeek, in Northern Ontario,
on Thursday, November 25, in
her 94th year.
Surviving are three brothers,
Gordon and Milton, of New
Liskeard, and Norman, of Van-
couver.
Funeral service was held at
the Westlake funeral home,
Zurich, on Saturday, Novemb-
er 27, at 2.30 p.m., with int-
erment in Bayfield Cemetery.
Rev. J.W. Huether, of Em-
manuel United Church, Zurich,
officiated.

MARRIED AT NORWICH - A former resident of Zurich,
Terry Allan Black, son of Mr. and Mrs. Reg Black, of Norwich,
was united in marriage with Miss Maria Dranna Mereien, daught-
er of Mr. and Mrs. Henry Mereien, of Burgessville, at a cerem-
ony performed at the Norwich United Church by Rev. Elgin Rin-
toul. The wedding took place on Friday, November 12, at 7 p. m,

Farmers should be aware of
the new lumber standards, ad-
vises Professor Ross Irwin,
School of Engineering, Univer-
sity of Guelph.
For many years, a 2 x 4 was
actually 1 5/8 inches by 3 5/8
inches. This has now been red-
uced to 11/2 inches by 3 1/2
inches.
The changed standards are the
result of a decade of develop-
ment in Canada and the United
States, says Professor Irwin.
The new standards ensure more
uniformity in size and moisture
content. Under the old rules,
no allowance was made for the
shrinkage of green lumber. Now,
separate schedules have been
established for green and dry
lumber to ensure they end up
the same size.
Lumber 2 inches and less in
thickness with a moisture cont-
ent of 19'/o or less will carry a
stamp of S -DRY. If the moisture
content is above 19r/o, it is
stamped S -GRN and should have
been oversized when cut.
Dealers may have the old and
new sizes in stock for a while.
For this reason, it is important
to remember the revisions when
making purchases for remodeling:

Bay; and the Five Oaks perman-
ent staff. The course is offered
each fall at Five Oaks.

Loss of moisture causes burn
Freezer burn on frozen food
is caused by loss of moisture.
,It indicates long storage or poor
handling of food.
Moisture is lost if frozen foods
are partially thawed and then
refrozen. This can happen in
overloaded frozen food counters
or with a rise in storage temp-
erature during transport or in
'retail stores. To maintain
quality of frozen food, temper-
atures just below freezing (32 d)
are not low enough. Quality
is maintained only at 0 deg. or
lower. Low temperature itself
does not guarantee quality. A
torn package or wrapping that
exposes food to the cold dry
air of the freezer allows moist-
ure to escape by evaporation,
and freezer burn results.
Freezer burn is characterized
by a change in color. Large
chalky white areas or dark patcht
appear on poultry. Red meat
like beef becomes light pink
and may have gray spots. Veg-
etables will fade to a pale green,
The loss of moisture also results
in loss of flavor, dryness, and
poor color in the cooked product,
say food specialists at the Ont-
ario Food Council, Ontario Dep-
artment of Agriculture and Food,
Buy frozen foods in well -
sealed, undamaged packages
and inspect meats for freezer
burn. A layer of frost inside the
package is another sign of thaw-
ing and refreezing. Do not buy
foods stacked above the load
line in frozen food counters.
