Stored apples
Over six million bushels of
apples are picked from Ontario
trees every year. Half of them
are placed in special storage
units designed to maintain apple
quality for later sale. These
may be cold storage units or
Controlled Atmosphere (C.A.)
units.
After harvest, apples cont-
inue to ripen. If they are plac-
ed in cold storage, where the
temperature is just above the
freezing point of apples, ripen-
ing slows down. High humidity
prevents drying and shriveling.
High quality apples can be stor-
ed this way for about three
months. Apples available now
and until February will be cold
storage apples. After that
time, low temperature alone
will not slow down ripening
enough to maintain quality.
Controlled Atmosphere units
will then be opened and "C.A.
apples" made available.
As apples ripen, either on the
tree or after harvest, they take
in oxygen and gine off carbon
dioxide. C.A. storage uses
retain quality,
a combination of reduced oxyg-
en supply, raised carbon diox-
ide levels, and low temperature
to virtually halt the natural
ripening process. Apples are
held in suspended animation.
They keep the same crispness
and flavor they had at harvest,
say food specialists at the Ont-
ario Food Council, Ontario Dep-
artment of Agriculture and Food.

Salvation Army
While many of us enjoy the
warmth and love of family and
friends at Christmas time, the
lonely and unwanted don't
have this privilege. But they
are not forgotten, for the men
and women of the Salvation
Army love and care for the
less fortunate of our community.
The Salvation Army tries to
