Recipes for Christmas
A hot steamed pudding filled
with fruit and spices and topp-
ed with a sprig of holly could
only spell "Christmas." How
proud you can be of your mas-
terpiece!
As a boon to lightening the
load Christmas morning, most
puddings can be made a few
days ahead, cooled and refri-
gerated, To serve, wrap in
aluminum foil and brake at
325 degrees F. for 4 to 1 Hour,
or until hot, suggests the Food
Department, Macdonald Instit-
ute, Guelph. Serve with your
favorite sauce.
Here is a recipe for tradi-
tional plum pudding. This one
is made in a double boiler, but
you may use the conventional
steamer.
Plum Pudding for Eight
11h pounds seeded raisins
1/4 pound chopped blanched
almonds
pound diced candied cit-
ron peel
1/4 pound maraschino
ries, halved
tablespoons flour
teaspoon baking soda
teaspoon salt
teaspoon cinnamon
teaspoon ground cloves
teaspoon nutmeg
teaspoon allspice
pound brown sugar
cups soft stale bread
crumbs
1/z pound suet, grated or
very finely ground
4 eggs
1/4 cup grape juice
Sprinkle raisins, almonds, cit-
ron peel, and cherries with
flour. Sift spices together. Add
to sugar. Add bread crumbs
and rub the suet into the bread
crumb mixture. Combine with
the fruit and
nuts. Add well -
beaten eggs and grape juice.
Turn batter into
the well
greased upper part of a 3 -quart
double boiler. Cover tightly.
Cook over boiling water 4 to 5
hours. Be sure to add water as
needed. Serve hot with a hard
sauce.
This pudding may be made
the day before, cooled and re-
frigerated. Re;heat in double
boiler one hour before serving.
It may also be cooked in well
greased individual pyrex cups
which have been covered with
Most dairymen agree that
calves born in the barn get
more attention than those born
on pasture. But the natural ha-
bits are changed when calves
are put on twice -a -day pail
feeding. The result: stomach
upset, scours, or colic, says the
Ontario Veterinary College's
Farm Service veterinarian, Dr.
J. F. Cote.

Calves normally o

when nursing a cow. But pail -
fed calves often gulph hung
rily after the long wait bet-
ween feedings. Sometimes they
even inhale milk into their
lungs.
"Nipple pails are a big help
in solving this problem," says
Cote. "Regular feeding is im-
portant. And it's best to feed
the same amount of milk both
night and morning. Keep the
milk temperature the same too."
Cote points out that one of the
common causes of scours is
over -feeding.
What about colostrum?
The first milk not only con-
tains a lot of the essential vit-
amins and minerals, but also
antibodies which help fight
early calf -hood diseases. "The
calf is born with very few an-
tibodies and, if colostrum is
not fed, the calf is likely to
pick up common infections,"
states Cote. Losses are highest
in calves that don't get colo-
strum.
