Christmas Cake
ib. powdered sugar
lb. butter
ib. flour (2 cups)
6 eggs
% pint wine
1/2 pint brandy
11/ teaspoons mace
11/ teaspoons cinnamon
11 teaspoons nutmeg
1 lb. raisins
1 lb. currants
1/4 lb. each of orange, lemon
and citron peel
1/4 lb. each of candied pine-
apple, cherries and rhu-
barb
1/1 lb. dates
1i2 lb. figs
1 lb. nut meats
Steep spices in wine and brandy
overnight. Grease large angel
food pan and line with paper,
which should also be greased.
Bake in a slow oven for two
hours. (This cake has taken
many prizes).
Unbaked Christmas
Goodies
Into a buttered saucepan put:
1 cup brown sugar
1 egg (slightly beaten)
1 cup fine cocoanut
/ cup chopped nuts
1/2 cup cut maraschino cher-
ries
1 cup chopped dates
1 teaspoon vanilla
1 teaspoon almond flavoring
2 teaspoons juice of maras-
chino cherries.
Cook this over low heat until
it thickens. Cool mixture, then
form into balls and roll in fine
cocoanut or in finely crushed
peanuts. Keep in refrigerator.
Cranberry Bread
Sift together:
2 cups flour
142 teaspoon salt
11 teaspoons baking powder
112 teaspoons soda
1 cup sugar
Grate rind of 1 orange and 2
tablespoons Crisco in cup, add
enough hot water to make %

1 beaten egg
1 cup cut ccranberries
1 cup chopped nuts

1/2 cup butter
1/2 cup lard
2 cups brown sugar
1 cup cocoanut
2 cups flour
2 cups oatmeal

Mix above ingredients as for
pie dough, then add:
1 teaspoon vanilla
2 eggs
Mix well. Roll into balls, the
size of a walnut, put on baking
sheet and pat down. Bake at
350 degrees.
Christmas Snowballs
1 cup butter
1/2 cup fruit sugar
/a teaspoon vanilla
1% cups flour (all purpose)
/ cup chopped nuts
Beat butter until creamy, add
sugar gradually and continue
beating until mixture is light
and fluffy. Then add vanilla,
flour and nuts and mix well.
Shape dough into small balls
and place on ungreased baking
sheet. (f dough is too sticky to
handle, chill in refrigerator for
a few hours before shaping it
into balls), Bake in 350 degrees
oven for about 20 minutes. Re-
move from cookie sheet and

Chinese Chews
% cup sifted flour
1 cup sugar
1 teaspoon baking powder
14 teaspoon salt
1 cup chopped dates
1 cup chopped walnuts
3 well beaten eggs
Sift dry ingredients. Stir in
remaining ingredients, Pour in-
to greased 101/2 by 151/2 by 1
inch pan. Bake in slow over
100 degrees for 20 minutes.
Cut while warm. Three dozen
fingers.
Oatmeal Cocoanut
Cookies
1 cup white sugar
1 cup brown sugar
1 cup shortening
2 cups oatmeal
2 cups cocoanut
2 eggs
2 cups flour
1 teaspoon salt
1 teaspoon soda
1 teaspoon vanilla
1 teaspoon baking powder
Mix in order and shape into
small balls. Press cherry or
rasin on top. Bake 10 to 12
minutes.
Christmas Cookies
% cup butter (scant)
1 cup white sugar
4 eggs
lemon and orange rind
grated
Y2 can blanched almonds
chopped
3' cup finely cut citron peel
1/2 teaspoon each; nutmeg,
cinnamon and mace
4 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
Roll dough not too thin, cut
with Christmas cookie cutters
or with a tumbler. Bake about
seven minutes at 350 degrees.
When removed from oven, ice
with a thin icing made of icing
sugar and lemon juice. If de-
sired half a blanched almond
(separated) may be pressed in-
to cookie before baking. These
cookies will keep well if kept
in cookie tin, they improve in
flavor as they ripen.
P.S. In a recipe in last week's
paper for Fruit Cake, it read 5
or 6 eggs; this should have
been 5 large or 6 small eggs.
Date Crispies
2 eggs
1 cup white sugar
11/2 cups dates (cut up fine)
Beat this up, put in frying
pan on top of stove and stir till
it thickens.
Have two cups rice crispies
in another dish and stir hot
mixture into them. Have about
a cup and a half rice crispies
rolled (real fine), when the
mixture gets cool enough to
handle form into tiny cakes us-
ing the rolled crispies to keep.

Quick Chocolate Cookies
In a heavy saucepan put 1/a
cup butter, cup milk and 2
cups sugar, Put on stove and

Remove mixture from the
heat and add above ingredients
that have been thoroughly mix-
ed. Drop by teaspoonful on a
cookie sheet that has waxed
paper over it. Put in refrigera-
tor to harden and keep them if
you can.
Golf Balls
1 small bottle of maras-
chino cherries (cut)
30 marshmallows (cut)
40 graham wafers (rolled
fine)
1 tin sweetened condensed
milk
% cup nuts
Combine above ingredients
with the milk, except 3.
