Federation Fieldman Claims Farmers
Have Been Led Astray In Recent Years

A this time of year "Garden
Paths" are a thing of beauty.
Those of you who have visited
Niagara, Ottawa, or the gardens
at Hamilton will realize the
thrill of "Garden. Paths." Many
farm lawns and flower gardens
as well as urban homes are wor-
thy of sub speed -limit driving.
Yet I doubt that any of these
can compare with the beautiful
"Garden Paths" down which
farmers have been lead period-
ically over the past several
years.
Vertical integration was one
of these. Broiler growers per-
haps accepted this advice more
redily than any other group.
But 13, 14, or 15 cent broilers
has shown that this path can
lead to a dead end.
Then we were told that farms
were too small and production
too low and inefficient. We
must correct all of these. Hog
producers took the bait, and
suffered accordingly but they
did smarten up quickly and
their industry is again compar-
atively satisfactory. Perhaps
their organization can be given
credit for this since they can
and do give detailed and accur-
ate information on markets and
marketings , of their product,
Again, hod often have we
been told that if only farmers
would accept production contro-
ls their prices would increase
and all would be well? Of cour-
se the experts all agreed that
this was impossible with farm-
ers. But the Almighty has very
effectively controlled produc-
tion. With what results?
According to the London. Free
Press of July 19, the OFA called
a meeting of experts to consid-
er what it termed "a looming
crisis" of increased prices in
farm products.
The recommendations were as
follows: Retain • Ontario winter
wheat for feed, (what happens
next year if we force our export
customers to learn to get along
without our Ontario wheat?)—
Ask the Federal Government to
issue import permits for US
grain. And all this for the pur-
pose of preventing an increase
in the price of cattle, hog and
poultry products.
The only redeeming feature
in the article is the statement
that these recommendations are
not official policy decisions of
the OFA.
Along side this article is a
statement that the federal gov-
ernment is making every effort
to supply fodder to western
livestock producers in order
that the cattle market will be
depressed as little as possible.
Just below this item is a head-

Perhaps a more practical
"Garden Path" could be found
in a statement made by one of
our county beef producers when
he said, "I think I will only
produce those ,products that are
sold through marketing Boards,
(wheat, beans and hogs). The
alternative, of course, is that
producers maket all their pro-
ducts.

becue, or fix them yourself.
To prepare, first eviscerate
the chicken, if it is not already
done. Then remove the wing
tops; next cut out the backbone
and neck all in one piece. Kit-
chen shears work very well for
this job. Free the breastbone
with a knife by cutting along
each side. The bone can be
snapped out then, by holding
the carcass firmly in the rear
with one hand, while pushing
upwards on the breast with the
other.
Select birds that are a uni-
form size, so that they'll all be
cooked at the same time. Look
for the government grade tag.
It indicates quality. Special is
a purple tag, grade A is red,
grade B blue, grade C yellow.
Prepare the barbecue sauce
you like best and let the bird
soak in it for at least one hour.
This gives the chicken full flav-
our.

When the fire is burning
well, with an even glow, start
the birds. Begin cooking with
the skin sides up. Turn the
birdsfrequently and every time
you turn therm, brush on more
sauce with a pastry brush.
Remember that chicken takes
much longer to cook than steak
or hamburgers. With chicken,
long, slow cooking develops
flavour and keeps it from
burning. Allow at least one to
one and a half hours for the
chicken to barbecue.
To tell when the chicken is
ready to eat, twist the drum-
stick. If it breaks easily from
the thigh, call the family to sup-
per.
