Sugar and Spice (Continued from Page 2) By Sunday night I look and feel like a sales manager who has been entertaining a couple of out-of-town clients. I'm sun- burned again, there isn't a cold beer left in the house and I've been on a 36 -hour treadmill of swimming, bowling, tranpolin- and cook -outs. Around 10 that night the "clients" are draped on their beds like a couple of wet towels, the Old Girl is yawning wildly and the cat, who is pregnant, by the way, is bedded down for the night. It is time for Dad to start his Latin homework so he can get it done by 1.30, so he can get up at 5.30, so he can drive back to the city for an 8 o'clock lecture. I'm not complaining, mind you. But compared to the mon- astic simplicity of my scholar- ly, leisurely week the weekend at home is about as restful as eating lunch off a moving con- veyor belt with one hand, while pulling on your trousers with the other. Freeze raspberries now and you'll be able to enjoy them all winter. Freezing is a simple process and when it's done cor- rectly, you can be sure of good results. First, carefully choose the berries to be frozen. The pro- per stage of maturity for quick- freezing is reached when the fruit is at its best stage for eat- glish revised version of the new Testament to Mrs. Fink was made by Mrs. John Baker. Mrs. J. For finest flavour, fruit is selected for freezing when it is firm, but not under -ripe and hard. Freezing won't ripen ber- ries. If necessary, wash the ber- ries. Half fill a sieve with ber- ries and dip it in and right out of water. Pick out any that are bruised. Macdonald Institute, Guelph, suggests using a sugar pack for raspberries. Mix 1 pound of sugar with 5 pounds of berries. (1 pint of berries weighs about three-quarters pound). Sift the sugar over a small quantity of fruit in a bowl, stirring careful- ly to prevent crushing the fruit, It's important to freeze them immediately after the berries are packed. Select freezing con- tainers that will hold liquid, and are moisture, vapour and waterproof, Plastic and card- board are good but check each one for tears or breaks. Place the berries in the con- tainers, leaving a half inch headspace in pint containers and three-quarters inch in quart containers. The headpiece al- lows for expansion during freez- ing and keeps the package from breaking. To defrost, leave the unopen- ed fruit in the refrigerator. This gives a uniform product and less juice is lost, Eat the ber- ries as soon as possible after de- frosting. There will be an ex- cessive loss of juice if the ber- ries are allowed to stand after they are thawed. Raspberries take from 6 to 8 hours to thaw in the refrigerator. always FINE FOODS MODERN DINING LOUNGE ENJOY THE FINE ATMOSPHERE OF OUR ATTRACTIVE ALPINE ROOM Our Entire lintel k Equipped with "Hi-Fi" System for your Listening Pleasure WE SPECIALIZE IN Voe STEAKS -CHICKEN - FISH Dominion Hotel PHONE 70 — ZURICH IIIIIIIIIIlllllllllllllllllllllllll!!llllil{IIIIlUII{{{{III{IllillilllllllllililllllLlllllillllllllllllllllllillilllilllllllllllllllll 4,11,1/11 AND BYILICHNG MATERIALS GENERAL CONTRACTORS HEATING - PLUMBING - WIRING - FULL LINE of HARDWARE Now Is The Time To Install Your Oil Burner for Next Winter Special Prices Now To The End of August Modernize Your Bath Room Beat The Sales Tax Let Us Quote You Prices on the Complete Changeover Specials Now on 3 -pc.
