This pr`ac- !;lee gives a'weak-bodied pale butter that may also be streaky. If the weather is warm, get some ice .and t col the cream, also the wash water. Butter made from well -cooled cream and .washed with ice -water will he firm enough to stand sufficient work- ing to give an even distribution of :,tit, a good color and firni texture. 1f color is needed, be careful not to add a drop too much. Churn the "Exhibit" two or three days before the fair. This will give time to set and blending of flavor and salt. The packages should be as neat as possible. Always wrap prints in a clear, good quality, butter wrapper, See that the prints are well made, clean-cut and firer. Most judges wan! a butter churned from a cream tha. is sweet or of low acidity.
