ing. As a further precaution, I add.
the egg and corn starch to the milk
before I add the cannel. It is a good
plan to keep an inexpensive pan just
to make carrael in, as it spoils a pan
used for other purposes.
1 cup brown sugar
2 eups milks
2 tablespoons corn starch
1 egg
Cook the brown sugar over a slow
fire Until it has become brown, being
very careful not to scorch. Mix the
corn •starch with a little water and
add to the beaten egg. Heat the milk
to the boiling point and add slowly
to the egg mixture. Add the ca.rmel
and cook slowly stirring all the time
until thick, and then cook for 2 min-
utes longer to remove all taste of un-
cooked starch. Chili well and serve
with cream. Chopped nuts may be
sprinkled on top if desired,
