XMAS CHARLOTTE
Line a large mould with split lady
fingers or fingers of sponge k cake.
Make this gelatine cream mixture—
increasing your quantities asyou may
desire; this amount gives twelve mo-
dest helpings
It requires:
2 tablespoons gelatine.
1/2 cup cold milk
% cup hot milk
24 cup fine granulated sugar
1/4 teaspoon salt
4 cups whipping cream
1 cup well-drainedcanned pineapple
1 tablespoon vanilla
x/ cup drained maraschino cherries
2 tablespoons chopped preserved or
candied ginger
s4 oup blanched chopped. pistachio
nutsor almonds
The fruit will play up your color—
so will pistachio nuts; and did you.
know that you could buy coloured al-
monds now, in little cellophane bags?
Save out some of your chopped col-
oured nut -meats to sprinkleover the;
to of your mould when you .turn it.

ries. Soak the gelatine for five min-
utes in' the cold water. Dissolve the
sugar' and salt in the hot milk, then
pourover the softened gelatine and
stir until it is dissolved. Chill, stir-
ring at intervals, until mixture is the
consistency of honey -then whip it
until it is light and frothy and fold
in the cream, which has been beaten
stiff and „flavoured with the vanilla.
Have the well -drained fruit and chop-
ped nutmeats' and ginger mixed and
ready -and fold in now: Turn into
the .: sponge -lined • mould or serving
dish and chill until firm. Turn out,
garnish with halved red cherries or
bottled red grapes and a sprinkling
of green -nutmeats,
