the fact that spring has
sprung, May is a wonderful
month to reacquaint your-
self with the great out-
doors. And with the magic
of microwave cooking,
you'll be sure to spend less
time in the kitchen. Or
bring the outdoors inside.
Pick a fresh bouquet of
spring flowers to set a
pretty table, open the win-
dows, and let the sun shine
in.
SPRING LAMB
ROAST
5 pound leg of lamb
3 cloves garlic,
minced
2 tbsps. oil
3 tbsps. soy sauce
1 cup dry sherry
Salt and pepper to
taste
Place all ingredients ex-
cept lamb and salt and
pepper in a 1 -cup glass
measure. Microwave for 1
minute, or until mixture is
warm. Place leg of lamb
fat side down on a mi-
crowave roasting rack, or
m a 2 -quart glass utility
dish. Baste with sherry
mixture, and microwave
for 25 minutes. Rotate dish
1/4 -turn, turn roast over,
and baste. Cook for 15 min-
utes more. Baste again,
sprinkle with salt and pep-
per, and cook 5 to 10 min-
utes more. Then remove
roast from the oven, cover
with—fait—and -let sit for 15 -
minutes to complete cook-
ing time, Seryes 6 to 8. ___--
MICROWAVE
APPLE RINGS
3 large cooking ap-
ples
3 tbsps. butter or
margarine
Confectioners' sugar
to taste
Dash cinnamon
2 tbsps. lemon juice
Melt butter or marga-
rine in large shallow glass
dish. Wash apples, core and
slice into 1 -inch thick
rings. Place slices atop
melted butter in a single
layer, sprinkle with sugar
and cinnamon to taste, and
then with lemon juice.
Cover with wax paper and
cook for 5 minutes, rotat-
ing dish 1 -turn halfway
through cooking time. Ap-
ples should be tender.
Serves 6.
BROCCOLI -CHEESE
CASSEROLE
2 pkgs. (10 oz. each)
frozen chopped
broccoli
Y4 cup butter or mar-
garine
1 large onion,
chopped
2 tbsps. all-purpose
flour
1 cup milk
1 jar (8 oz.) pasteu-
rized process
cheese spread
3 eggs, slightly beat-
en
1/4 tsp. EACH salt,
pepper and ground
nutmeg
3/4 cup finely crushed
seasoned croutons
Place unopened pack-
ages of frozen broccoli in
the microwave oven. Cook
4 to 5 minutes to defrost.
Drain broccoli in the colan-
der, pressing out all liquid.
In a 2 -quart casserole, melt
butter 11/2 minutes or until
bubbly. Add onion and
cook, uncovered, 21 min-
utes or until tender. Stir in
flour and cook, uncovered,
one minute. Blend in milk
and cook, uncovered, one
minute or until thickened.
Add cheese, stirring until
melted. Blend in broccoli,
eggs, salt, pepper and nut-
meg_ Cook, uncovered, 3
minutes. Turn dish and stir
gently, pushing cooked
mixture from edges of dish
to center for even cooking.
Cook 3 minutes, then stir as
before from outer edges to
center. Sprinkle top evenly
with crumbs. Cook, uncov-
ered, 4 minutes or until
mixture is set in center
when lightly touched. Let
stand, uncovered, 5 min-
utes before serving. Makes
6 servings.
