Almost any molded gela-
tin salad can be made
quickly and easily with the
help of your microwave.
No need to heat the water
on the stove — just pour
the proper amount into a
large glass measuring cup,
add the gelatin, and you're
ready to go. The Molded
Mustard Salad described
below takes only one r tin-
bute of cooking time in your
microwave, and is a per-
fect accompaniment to a
ham or beef roast. Garn-
ished with sections of Man-
darin orange, and perhaps
a few sprigs of parsley, this
salad makes a visual, as
well as tasty, surprise.
MOLDED MUSTARD
SALAD WITH
MANDARIN ORANGES
1 envelope unfla-
vored gelatin
/ cup cold water
1 cup mayonnaise
1/3 cup prepared
mustard
1/4 tsp. kfalt
1/4 tsp. paprika
l cup whipped
cream
1 (8 -oz.) can Manda-
rin orange sections
In a four -cup glass mea-
sure, soften gelatin in cold
water. Heat 1 minute until
dissolved. Cool. Combine
mayonnaise, mustard, salt,
and paprika and mix well
until blended. Stir in gela-
tin. Chill until slightly
thickened; fold in whipped
cream. Pour into a one -
quart -tall mold and chill
until firm. Unmold and de-
corate with oranges.

FREIBURGER'S
FOOD MARKET
SPINACH SALAD
WITH HOT BACON
DRESSING
2 lbs. spinach
4 strips bacon, diced
in large pieces
1 onion, chopped
1/2 cup oil
1/2 cup vinegar
1 tbsp. sugar
Salt and fresh
ground black pep-
per to taste
2 tsps. cornstarch
1/2 cup water
Place bacon in a one -
quart casserole. Cover,
cook for two minutes. Stir,
and cook for two more
minutes. Add onion and oil,
cooking for four more min-
utes, until bacon is brown.
Mix in remaining ingred-
ients and stir well. Cover
and cook three minutes
more, until slightly thick-
ened. Stir. While dressing is"
cooking, wash and trim
spinach. Arrange in a salad
bowl. Pour cooked dressing
over spinach, and toss.
Serves eight.
HOT GERMAN
POTATO SALAD
4 medium potatoes
11/2 cups water
1 tsp. salt
6 slices bacon
2/3 cup chopped onion
3 tbsps. flour
2 tbsps. sugar
1 tsp. salt
1/2 tsp. celery seed
1/4 tsp. pepper
26 cup water
1/3 cup vinegar
Peel and quarter pota-
toes. In a one and one-half
quart dish, place one and
one-half cups water and
one teaspoon salt. Add po-
tatoes, cover, and cook 15
to 18 minutes, rotating one-
fourth turn halfway
through cooking time. Let
sit five minutes covered,
then test for doneness.
Slice thin and set aside. To
cook bacon, arrange slices
in a shallow glass baking
dish and cover with a
paper towel to avoid
splattering. Cook three
minutes, turn, and cook
three minutes more. Re-
move bacon and set aside.
Saute onion in bacon fat
three minutes more. Re-
move bacon and set aside.
Blend flour, sugar, salt,
celery seed and pepper
with onions and cook two
to three minutes, stirring
every minute until smooth
and bubbly. Stir in water
and vinegar and bring to a
boil. Add potatoes and
chopped bacon. Cover and
heat two minutes longer.
Allow to sit five minutes
before serving. Serves four
to six.
