Getting to heart
of weight loss
Ah, the pleasures of life!
Eating is certainly one of
those human delights, as
well as one of the necessi-
ties. It's all a matter of bal-
ance.
Just realizing the differ-
ence between the caloric
count of 1 teaspoon of may-
onnaise (33 calories) and 2
tablespoons of the same
(202 calories) can graphi-
cally point ,up the differ-
ence between eating to be
well and eating too well.
Nutrition - what and
how people eat - is at the
heart of current health is-
sues. It is a lifestyle factor
that most of us can control.
Yet, it is estimated by the
surgeon general that about
40 million adult Americans
have a weight problem,
with more than half of
them considered obese.
No matter how heavy
you are, losing weight and
keeping it off are goals
that you can achieve.
High blood cholesterol
levels are believed by
some to be associated with
an increased risk of heart
disease. Although blood
cholesterol levels vary,
populations with a high
consumption of saturated
fat and cholesterol tend to
have high levels of blood
cholesterol.
Debate continues about
the desirability of making
general recommendations
to the entire U.S. popula-
tion regarding intake of
dietary fat and cholesterol.
Many scientists, including
the surgeon general, con-
sider it. sensible to con-
sume only moderate
amounts of fats and choles-
terol. Moderation poses no
known health risk, and
may reduce the risk of
heart attack. No diet, how-
ever, will insure against
heart disease.
The ideal form of nour-
ishment is a well-balanced
diet of regular food. Fat
has 21/4 times more calo-
ries Rer gram than either

protein or carbohydrate.
(Each gram of fat contains
nine calories; each gram of
either protein or carbohy-
drate contains four calo-
ries). Therefore, eating a
low-fat diet cannot only
satisfy your appetite, but
also help maintain the new,
lower weight as well.
Here are recipes which
are not only good for the
calorie -counter, but also
delicious foods that satisfy
the appetite.
EGG FLOWER SOUP
3 cups chicken stock
2 egg whites
2 tbsps. chopped
chives or green
onion tops
Bring the chicken stock
to a boil. Beat the egg
whites until they are
frothy. Slowly pour the
beaten egg whites into the
boiling chicken stock. Stir
constantly with a fork or
wire whisk. Continue to stir
rapidly until the egg whites
are shredded and look like
long strings. Serve very bot
in heated bowls. Sprinkle
the top of each bowl of
soup with chopped chives
or green onion tops. (You
can add salt -reduced soy
sauce if desired; this will
increase the sodium level.)
Makes 4 servings, negligi-
ble calories per serving.
CHICKEN
PHILIPPINE STYLE
A tangy flavor relates
this interesting dish with
adobo, a popular Philip-
pine entree.

chicken, cut into

r/2 cup vinegar
1 cup soy sauce
1 clove garlic,

Freshly ground

beef stock
2 tbsps. minced
ginger root
1/4 head cauliflower,
broken into
flowerets
11/4 Ib. broccoli, bro-
ken into flowerets
Y2 cup julienne -cut
celery
/ lb. pea pods (snow
peas)
Y4 head Napa cab-
bage, shredded
10 mushrooms, diced
V4 lb. bamboo shoots,
diced
1 tbsp. Low -Cal Soy
Sauce (see below)
112 cup water chest-
nuts, thinly sliced
1 medium onion,
thinly sliced
'/4 lb. bean sprouts
Heat stock in a heated
wok or skillet. Add ginger
root, cauliflower, broccoli,
celery, and pea pods. Stir -
fry 2 minutes over high
heat. Add cabbage, mush-
rooms and bamboo shoots.
Stir -fry 1 minute. Stir in
soy sauce and simmer over
low heat 1 minute. Add
water chestnuts,onion, and
bean sprouts and stir -fry 1
minute over high heat. Do
not overcook vegetables
should be tender but crisp.
Makes 10 servings, 41 calo-
ries per serving.
LOW -CAL
SOY SAUCE
Soy sauce diluted with
broth reduces sodium con-
tent, but not flavor.
3 tbsps. mild soy
sauce
11/2 cups low -sodium
beef stock
1,14 cup water, or 3
tbsps. strained
fresh lemon juice
1 tsp. grated lemon
peel (optional)
Combine soy sauce, beef
broth, water and lemon
peel. To store, refrigerate
in a jar with a tight -fitting
lid up to 2 weeks. Makes
about 2 cups. Each table-
spoon contains about 3
calories.
APPLE:PINEAPPLE
DESSERT
Thoroughly drain one
83/4 -ounce can crushed
pineapple; reserve5payrup.
Add apple juice (about one
and two-thirds cups) to re-
served syrup to equal 2
cups. In saucepan, soften 1
envelope unflavored gela-
tin (1 tablespoon) in juice
mixture; stir over low heat
till gelatin is dissolved:
Chill till partially set. Fold
in the well -drained,
crushed pineapple together
with 1 cup chopped, un -
peeled apple. Then turn the
mixture into a 31 -cup
mold. Chill till firm. To
serve, unmold. Makes 6
servings, 80 calories per
serving.
