Versatile Zucchini From now until about the middle of September is the time to stock up on fresh On- tario zucchini during its peak season, say the marketing specialists at the Ontario Ministry of Agriculture and Food. • Zucchini is a member of the summer squash family, and unlike the late or winter varieties, it has a tender and edible skin. Look for zucchini that is firm, has a good green color and is free from soft spots. It should . be fairly heavy for its size. Zucchini is a very versatile vegetable, and goeswill with other vegetables, such as tomatoes, green peppers, and eggplant, all of which are readily available during August. Cooked together with a few herbs and chop- ped onions, these vegetables make very tasty summer Casseroles. Since zucchini is a very tender vegetable, it requires only a short cooking time. To capture its delicate flavor, the best cooking methods in- clude pan frying, steaming and baking. Zucchini is a good vege- table to eat raw, too. It's great in salads, Just wash and cut into slices or chunks; there's no need to peel. Zuc- chini is also a good choice to include on a raw vegetable tray with a favorite dip. Preserve zucchini for the winter by freezing. Just wash, cut in slices, then blanch it for two minutes. Chill quickly and drain be- fore packaging, and freeze immediately. As an alterna- tive, after blanching, zuc- chini can be frozen in a single layer on a tray. Once frozen, it should be packaged and returned to the freezer. Laurie Gedke, George and Rosemary Finlay, sang, 'Jesus, I Believe in You' and 'I'd Like To Teach the World To Sing. They were ac- companied on ukeleles and baritone by the Gedke children and their numbers were much enjoyed. Flowers were placed in the church in memory of a. former member, John Hupfer, by his daughter and family, Betty and Blair Sharp, John, Tom, Dave and Sandra, and a friend, Hazel Griffith.
