Mushrooms: The fabulous fungus

All right, so "sauteed fun-
gus" doesn't sound exactly
appetizing. But use the word
"mushrooms," instead —
and if you're like me, your
mouth starts watering in
eager anticipation.
Lacking leaves or roots,
and unable to perform photo-
synthesis, this edible fungus
is among the simplest of
plants. And it's simply deli-
cious added to soups, stews,
egg dishes, casseroles,
salads, or just about any-
thing that could use a touch
of gourmet elegance.
Mushrooms are mostly
water (88 per cent). Evapor-
ation during shipping and
storage may result in a
rather shriveled product by
the time it reaches the mar-
ket. So be selective when you
shop, and feel free to pick
through your store's fungus
section for only the best -
looking ones.
With most vegetables,
smaller means more tender
and flavorful. This rule does
not apply to mushrooms, and
larger ones are just as tasty
as small.

ing with a damp cloth, by
rinsing briefly under the tap
or by swishing for a few mo-
ments in a bowl of cold
water. Dry immediately
with paper towels. Never
soak, or mushrooms will be-
come water-logged and
soggy. If you peel mush-
rooms, you're paring away
much of the flavor. Leave
the skin, and the flavor, in-
tact.
To microwave, place 2 to 3
tablespoons butter in a 11/2 -
quart glass casserole for
each / pound fresh, sliced
mushrooms Add mush-
rooms, cover and microwave
for 2 to 4 minutes (Four to 6
minutes for 1 pound) . Stir
and rotate dish 1/4 -turn half-
way through cooking time.
Be careful not to overcook.
As soon as mushrooms begin
to darken remove from the
oven. Let stand a minute or
so before serving.
STROGANOFF
CASSEROLE
1 (11b.) beef top round steak
3 tbsps. flour
1/4 tsp. each salt, pepper and
paprika
1 clove garlic, crushed
1 cup beef broth, canned or
from bouillon
4 ozs. egg noodles, uncooked
lb. fresh' mushrooms,
washed and sliced
2 tbsps. fresh chopped pars-
ley
/ cup sour cream
Slice beef into thin, 1/2 -inch
strips. (this is easier to do if
meat is partially frozen.) In
paper sack, mix together
flour, salt, pepper and pap-
rika. Close top and shake.
Add meat slices to bag and
shake again to evenly coat
meat.
Pour oil into bottom of 9 -
by -5 -inch glass loaf pan. Add
crushed garlic and . micro-
wave 15 seconds at HIGH.,
Spread beef strips evenly in
bottom of pan and cover with
two layers of plastic wrap.
Microwave at 50 per cent
power. (MEDIUM) for 6
minutes, stirring once half-
way through cooking time,
and rotating dish 1/4 -turn.
Pour beef broth into glass
measuring cup. Microwave
at HIGH for 2 minutes, until
hot. Pour over beef strips,
adding raw noodles, mush-
rooms and parsley. Stir gen-
tly to mix. Cover again with
plastic wrap and microwave
at 50 per cent power
(MEDIUM) for 12 minutes,
stirring once halfway
through cooking time.
Remove from oven,'stir in
sour cream, cover and let
stand for several minutes
before serving. Garnish with
parsley sprigs, if desired.
Serves 4.
SAVORY MUSHROOM
APPETIZERS
1/2 lb, meduim-size fresh
mushrooms
4 slices bacon
2 tbsps. minced onion
1 slice fresh, soft bread, torn
into small pieces
1 tsp. pepper
1/s tsp. garlic salt
Dash dried parsley
2 tbsps. water
Paprika
Wash mushrooms and dry
carefully. Remove stems,
chop and set aside. Place ba-
con strips on microwave
bacon rack, paper plate or
glass plate. Cover with paper
towels and microwave about
4 minutes, or until cooked.
Chop fine with sharp knife.
In- bowl, blend together
mushroom stems, bacon,
onion, bread pieces, season-
ings (except paprika) and
water. Mound filling into
mushroom caps and arrange
on microwave -safe serving
plate.
Sprinkle lightly with pap-
rika and cover with waxed
paper. Microwave 2 to 21/2
minutes, until hot. Makes 25
to 30 appetizers.

cent power) and uncovered
unless otherwise specified.

and the value?
A. This is Trade Mark No.
2 which was used briefly in
1958. Your Madonna is quite
rare and should be worth at
least $2,000.
Q. Enclosed is a picture of
a porcelain figurine that is
just beautiful. Please tell me
who made it, when, and how
much it is worth.

1 find that very confusing.
A. There are thousands of
collectors out there trying to
find matching pieces for
broken sets that they already
own. They will pay premium
prices.
On the other hand, collect-
ors are reluctant to buy sets
of china that are not open
stock. They realize that
sooner or later, they are go-
ing to have to look for match-
ing pieces when they break a
plate or cup, etc.
In checking recent prices,
I find a set of six Haviland
plates for $75 ($12.50 each)
and a single plate for $40;
that is typical.
