It &ems that the reeds off the plant were once played as pipes to soothe restless children to sleep. , Whether or not this is the true origin of the word, you're not likely to be lulled to sleep by today's recipes. And you'll have a "dilly" of a time preparing them, since they're all microwave quick and easy. The bright green, fernlike dill plant is easily grown at home, and. ensures a good supply of fresh dill (which can be difficult to find in the market). Instead, you'll find the dried leaves (dill weed) and the seeds of the plant — both . of which are used in' cooking. Dill seeds are best known Dil Iicious as the main flavoring agent in dill pickles. The flavor of the seeds is more pungent than that of the leaves, which tend to enhance rather than dominate a dish. , A favorite seasoning of Scandinavian cuisines, sprigs of fresh dill often are used to garnish 'open -face sandwiches, vegetable dishes and casseroles. DILLED CABBAGE IN SOUR CREAM 1 medium-size head cabbage 1'4 cup water 1 cup sour cream 1 tbsp. dill seed 1 2 tsp. each salt and pepper 2 tsps. fresh chopped parsley Wash cabbage and discard any limp or damaged outer leaves. Shred finely — you will need about 4 cups shredded cabbage. Place cabbage in glass casserole, add water, and' cover. GROUND BEEF STROGANOFF 1 lb. lean ground beef tbsps. flour 1/2 tsp. salt '-4 tsp. pepper 1 2 cup chopped onion (1 clove garlic, minced 1/2 tsp. dried dill weed 1/4 cup water 1 ' ( 10 oz.) can condensed cream of mushroom or cream of chicken soup 1.2 cup sliced fresh mush- rooms 1 cup sour cream 2 tbsps. fresh chopped pars- ley Crumble beef into 11/2 - quart glass casserole. Microwave, stirring frequently, 3 to 4 minutes; until meat is no longer pink. Stir in flour,. salt, pepper, onion and garlic. Microwave 2 to 3 minutes longer, stirring every minute. Stir in dill weed, water, soup and mushrooms. Microwave, covered, 4 to 5 minutes, stirring every 2 • minutes. Blend in sour cream, cover, and micro- wave 1 minute longer. Sprinkle with chopped parsley and serve over cooked rice or noodles. Serves 4 to 6. CREAMY DILL SAUCE 3 tbsps. butter or margarine 3 tbsps. flour '4 tsp. salt Dash white pepper) I! l cup milk 2 tsps. dried dill weed 1 -tsp. each chopped fresh parsley and lemon juice 12 tsp. Dijon mustard Place butter in 4 -cup glass measure. Microwave 1 minute, then stir in flour, a little at a time, to make roux. Microwave 30 seconds longer, until bubbly. Stir in salt and pepper, then gradually stir in milk, blending well. Microwave 3 to 3' 2 minutes, stirring every minute, until sauce is thickened and smooth. Add dill weed, parsley, lemo.n juice and Dijon mustard, stirring well to blend. Serve hot over cooked vegetables or fish. Makes about 1'-4 cups. For ex- ample, children's creations are a possibility as well as blow-ups of your favorite travel photographs. Provide your walls with permanent displaying facilities by installing lengths of wood doweling that have been split and milled' to create a notch to support the artwork, which needs to be mounted on tack - board or some other stiff material. Paint the doweling the color of your wall. This way it is easy to add and subtract from your gallery and there never are any tell-tale nail holes. Add some recessed ceiling lights so the gallery walls can be washed in light.
