Onion rings, onion soup,
boiled onions, sauteed
onions, raw onions ... I love
them all.
Early New England set-
tlers hung a string of onions
over the front door to pre-
vent sickness from entering
the house.
The onion, native to
Western Asia, is a member
of the lily family, which
includes garlic, shallots,
scallions, chives and leeks.
There are a number of onion
varieties: red, yellow,
silverskin, pearl, mild Ber-
muda, and sweet Spanish
and Italian.
One method I've found to
relieve oniony cry-baby eyes
(it's weird, but it works!) is
to poke your head into the
freezer, shut the door as far
as it will go and open your
eyes wide. In a few seconds,
the soothing cold air brings
blessed relief. (This also
gives you a chance to check
up on your supply of ice
cubes, frozen bagels, etc.)
Onions should be stored in
a single layer in a cool, dry,
well -ventilated spot. They'll
keep for about one month.
If you're an onion lover,
these microwave -quick
dishes will be more than
worth any tears shed.
MICRO -MARINATED
ONIONS
6 medium-size onions
3/4 cup vegetable oil
1/4 cup lemon juice
.1/2 tsp. dry mustard
Ua tsp. salt
1/e tsp. each freshly ground
pepper and crushed basil
Peel onions and cut off
ends. Pierce each onion in
several places with sharp
knife. Microwave in covered
container 8 to 10 minutes
until tender. Bland together
remaining ingredients and
pour over onions. Cover and
chill overnight, stirring
occasionally to blend
flavors.
Serves 6.
EASY ONION QUICHE
One baked 9 -inch pastry
shell
3 cups thinly sliced Bermuda
or Spanish onions
3 tbsps. butter or margarine
11b. cottage cheese
2 egg yolks
13 cup whipping cream
2 tsps. chopped fresh parsley
1/a tsp, salt
% tsp. pepper
Place butter and onion in
low, flat baking dish. Micro-
wave 5 minutes, stirring
every minute. Combine cot-
tage cheese, whipping cream
and egg yolks in glass mix-
ing bowl. Microwave, un-
covered, 1 minute. Stir in
parsley and seasonings, then
turn into baked pie shell.
Microwave quiche 10
minutes, turning dish 1/4 turn
every 2 minutes. Let stand 5
minutes before serving.
Serves 6.
SAVORY ONION SAUCE
1 small onion, finely chopped
5 tbsps. butter or margarine
2 tbsps. flour
1 cup milk
1 tbsp. Parmesan cheese
1/8 tsp. each salt and pepper
Dash paprika
Place onion and 3 table-
spoons of the butter in small
(1 -quart) glass baking dish.
Microwave, stirring every
minute, 3 to 4 minutes. Onion
should be translucent and
tender, not brown. Set aside.
Place remaining 2 table-
spoons butter in glass
custard cup. Microwave 5 to
10 seconds, to soften. Stir in
flour to make paste. In 2 -cup
glass measure, heat rnilk for
2 minutes. Add a few
tablespoons of milk, a little
at'a time, to flour paste, until
runny. Stir flour mixture into
milk and microwave 2
minutes longer. Stir in
Parmesan cheese, cooked
onion and seasonings. Micro-
wave 30 seconds longer.
Serve hot over cooked
vegetables, poached egg
dishes, meats, etc.
Makes about 1 cup.
