Tart and tangy
cranberry dishes

In autumn the cranberry
bogs turn bright red, and
from then on it's open season
on this festive fruit.
We associate the little
round rubies with Thanks-
giving and usually serve
them with turkey on the
holiday table. And at
Christmas, it's fun to string
the raw berries with popcorn
to decorate the tree.
The cranberry is as much
an American tradition as
apple pie. The pilgrims
called them "craneberries"
since their pink blossoms re-
sembled the head and neck
of a crane. And because the
large bird also hopped about
the bogs nibbling on the
berries, the name was
doubly appropriate.
High in vitamin C, cran-
berries were once packed in
barrels of cola water and
carried on long ship voyages
to prevent scurvy.
This is one berry you don't
want to eat raw. One Native
American tribe dubbed the
fruit "ibimi," or "bitter
berry." Raw cranberries are
also quite hard (they will
bounce several inches into
the air when dropped on a
hard surface) and must be
-cooked with sugar before
become palatable.
When cooking with fresh
cranberries, remember to
wash first and discard stems
and any bruised or flawed
fruit. They may be easily
frozen for later use, so stock
up at sales. '
Following are several
microwave -easy recipes fea-
turing fresh, frozen or
canned cranberries. Take
your pick for a quick break-
fast loaf, main dish or relish.
CRANBERRY
NUT LOAF
2' 2 cups dry biscuit mix
1 cup milk
1.2 cup sugar
1,4 cup flour
Legg
' 4 tsp. ground nutmeg
2 tbsps. grated lemon peel
3.; cup chopped frozen cran-
berries •
1.2 cup chopped walnuts
In mixing bowl, combine
biscuit mix, milk, sugar,
flour, egg, nutmeg and lem-
on peel. Place frozen cran-
berries in lender and chop
to maw 3/4 cup. Stir into
mixing bowl with nuts; mix
well. Turn batter i
to 9x5x3 inch glass loaf pan.
Microwave 81/2 to 91/2
minutes, turning 1/4 turn
after 4 minutes. When done,
toothpick inserted in center
should come out clean. Allow
to cool before slicing.
Yields 1 loaf , serving 6 to 8.
SPICED
CRANBERRY
CHICKEN
3 Ib.) chicken, cut into
erving pieces
'/ t p. each pepper and
paprika
1/2 cup whole cranberry
sauce
2tbsps. water
ltsp. each vinegar and soy
sauce
2 tbsps. butter' or maragine
3 whole cloves
1/4 tsp. ground cinnamon
Arrange chicken pieces in
2 -quart glass baking dish,
and sprinkle lightly wit
pepper and paprika.. Com-
bine remaining ingredients
in small glass bowl and
microwave 40 seconds. Stir,
then pour over chicken.
Microwave 23 to 25 minutes,
turning pieces every 8•
minutes, until chicken is
tender.
Serves 4.
QUICKIE
CRANBERRY
SAUCE
1 lb. (1 qt.) fresh or frozen
cranberries •
2 cups sugar
1 cup water
1/8 tsp. salt •
1/4 tsp. ground cloves.
Wash cranberries and dis-
card stems. Combine all.
ingredients in 2 -quart glass
casserole. Cover and micro-
wave 18 to 20 minutes, until
berries are tender. Serve
warm or chilled as relish
with meat or poultry..

1. Take off the four nuts and
remove the bolts that run
through the center of the spool
2. Nail the curved slats from the center of the spool
to the top, rounded edge of the spool halves.
3. Set this structure on a flat wooden base.
Add a front overhang and a scrap of roofing.
