Redness does not indicate ,ripeness. Peaches should be firm to the touch, and -give slightly with applied pressure. STORAGE: Keep unripe peaches uncovered at room temperature and not in direct sunlight. Ripe fruit can be kept for up to 5 days uncov- ered in the refrigerator. FREEZING: Choose firm ripe peaches with no green colour in the skin. Recommended varie- ties are: Redhaven, Enyoy, Harmony, Madison, Veteran, and Sunbeam, Peel, pit and slice. Peaches can be packed in cold syrup (2 cups sugar to 3 cups water) or packed in dry sugar using 2/3 cup sugar to 4 cups prepared fruit. Ascorbic acid (lemon juice) is an effective anti -darkening agent. NUTRITION: Peaches rank high in Vitamin A and contain some Vitamin C, A 31/2 oz.' peach contains 46 calories, 160-259 mg potassium and a fair amount of other minerals. J1.1.1.11UV a Talk about 1080 taxes The Huron County Federation of Agriculture at their regional meetings on Sept. 6, at the Huron Centennial School, Brucefield, and • the East Wawanosh School at Belgrave, are having informed speakers on the recently announced Provincial Equalization Factors. These new .factors may have a devastating effect on your 1980.tax bill if you live in .any one of 'the townships in Huron County, with the ex- ception of Hay. The proposed increases for 1980 taxes, range from a low of approximately six mills in East Wawanosh (or $48 on an average 100 acre farm) to a tremendous increase in McKillop of ap- proximately 40 mills (or $320 ion an„ average 1.00 . ,... acre farm). Perhaps the residents. of the rural townships ' will want an explanation for these sudden and drastic changes. Clearly, the auto -parts industry is facing special problems as the automobile. manufacturers proceed with their program to alter radically their designs - and therefore their buying patterns. We want to ensure 'that Canadian firms can maintain or increase 'their share of this dynamic market. In summary, our proposal for an industrial strategy consists of a comprehensive package of incentives and programs to encourage our manufacturing in- dustry. Designed to assist Canadian -owned businesse§ over foreign multinationals so that we 44 can establish control of our. Own . economic destiny, it would provide p"referential government procurement policies, innovative incentives to encourage Ontarians to invest in our economy, assistance with research and development costs and sensible manpower policies which would match young people with the available jobs.
