people_._--------- GODERICH SIGNAL -STAR, WEDNESDAY, NOVEMBER 18, 1987—PAGE 19 aughter's illness sparks book Her daughter's healing not only sparked a nutritionist's career, but it prompted the writing of a book. c� "Food and the Gut Reaction - Intestinal Health through Diet" is Elaine Gott- schall's way of sharing all she has learned in the three decades since her four-year- old daughter Judith Lynn was diagnosed as having severe incurable colitis. It is the result of Mrs. Gottschall's uncharted odyssey to keep her child alive and stave off an ileostomy (surgical removal of the colon and replacement with an external bag). "There is often an alternative to heavy medication and surgery. Many diseases can be prevented, alleviated or cured by nothing more radical than diet," says Mrs. Gottschall. She ought to know. Her daughter's years of treatment with cortisone and sulfonamides, plus innumerable other medical approaches, had been unsuc- cessful and major surgery seemed imminent. Then the Gottschalls heard of Dr. Sidney Valentine Haas, a 92 -year-old eminent New York pediatrician who had devised a diet that cured hundreds of children born with celiac disease. Patients who followed Dr. Haas' Specific Carbohydrate Diet for a minimum of one year were then able to return to a normal diet with complete and permanent disappearance of symptoms. Since ulcerative colitis and celiac disease share many symptoms, among them malabsorption, Judith was placed on the diet. She was symptom-free within two years, returned to eating normally after another few years and has remained in ex- cellent health for over 20 years. Four years ago she gave birth. The healing of Judith however, left Elaine and her husband Herb with a lot of unanswered questions - questions they needed answered. Mr. Gottschall, a chemist who graduated from Yale in 1942, asked his wife "to get into university and find out what's going on". She did as she was asked. For the past 20 years Mrs. Gottschall has, as a biochemist and cell biologist, specialized in the study of the effect of food on the human body. Ten of these years have been spent at universities, first at Montclair State College, Montclair, New Jersey, where she received her Bachelor's degree m 1973, graduating Magna Cum Laude, and then another year in the Department of Graduate Studies m Nutri- tion at Rutgers, the State University of New Jersey, New Brunswick, New Jersey. In 1975 she became a member of the Department of Cell Science at the Univer- sity of Western Ontario's Zoology Depart- ment and spent four years there in- vestigating the effects of various sugars on the digestive tract. She obtained a Master of Science degree in that Department in 1979. For the year following Mrs. Gott- schall worked in the Department of Anatomy of the University of Western On- tario investigating the changes that occur in the bowel wall . in inflammatory bowel disease. "When I first went back (to school) I wanted to understand why the diet worked. I wanted to know what established scien- tific principles supported it, and I found thousands of them," she says. Now several years later, with those questions answered and the understanding there, Mrs. Gottschall's purpose is to pass on that information. "I want to help other families avoid what we went through. Judith's illness nearly destroyed our family. Judith suffered hor- ribly and knew she was going to die. Our older daughter became anorexic out of guilt because she was healthy and her sister so ill. It was a horrendous period in our lives, but it happened for a reason;" she says. "Seeing your child become depiliated daily does something to you. And remembering all that gave me the stamina and the dedication to go through the 11 years of university I went through." Although she now teaches courses in human biology and food at Fanshawe and lectures and works as a consultant for those with behavioral and bowel problems, Mrs. Gottschall thought a book would reach more people with her message. "Herb challenged me to write the book myself. We wanted those who needed this information to have it," she says. Mrs. Gottschall began her project four years ago and now knows almost as much about self -publishing as she does about nutrition. Sorting out the data on a foot -high stack of index cards and collating and in- tegrating all the material she had col- lected took over a year. The book was written so she might share everything she's learned about the co -relation between health and diet, in the 30 years since her youngest daughter was diagnosed as having incurable intestinal colitis. The Gottschalls finally decided to publish the book themselves. The process has consumed a great deal of time and money, but they now have over 5,000 copies of the book on the market. "Food and the Gut Reaction" is dedicated to the memory of Dr. Sydney Haas and gives - credit to "husband Herbert" for his unlimited patience, moral support and continual prodding...The back cover records testimonials from people in Ilderton, Centralia, Strathroy and Port Elgin. On one of the first pages, the reader is cautioned not to engage in self-diagnosis' and treatment, but to consult a doctor, especially one with a particular interest or training in nutrition, before starting the regimen proposed in the book. The book is divided into two sections. The first half explains scientifically -how different carbohydrates (sugars and star- ches) affect the body, and why the Specific Carbohydrate Diet eliminates all sugars but honey, all milk products but properly Les Willems 524-8451 524-2667 prepared yoghurt and some cheeses, and omits gluten -containing grains such as wheat, rye, oats, barley, corn and rice. Nut flours are used instead and dishes are sweetened with honey or an artificial sweetener. The well-balanced and nutritious diet is introduced in Chapter 7. The second part of the book, called the gouin,et section, con- tains recipes for everything from ap- petizers, dips and spreads through soups, salads and dressings to vegetables, main dishes and desserts, candies, preserves and beverages. A final chapter gives instructions on making yoghurt and cottage cheese, as well as baby formula to be used for short periods of time for babies with severe diarrhea. The book ends with an excellent glossary and a detailed appendix which lists the types of cheeses allowed and prohibited, the amount of sucrose added to many com- mon foods, and sources of vitamin supplements. Professor Bill Andrews, a native Clinto- pian, and a practising ecologist and en- vironmental scientist, kicked off the day with a talk, some thought it a lecture, on ethics in the outdoors. Following the talk the teachers were bussed off to various conser- vation areas, including Bannockburn, the East Wawanosh Nature Centre and the Hullett Marsh where they participated in a number of tours, hikes and educational workshops. They were "Singling out the senses", The Importance of Fencerows and Woodlots, "Animal Adaptation", "Prepar- ing a successful field trip and "Outdoor ac- tivities in french. Before leaving the teachers were urged by Mr. Andrews to think ethically about everything they would do in the day. According to Mr. Andrews there has been a change in people's behavior toward the natural environment over the years. Now instead of living in harmony with nature, Mr. Andrews said mankind has the idea it stands apart from nature, that it has dominion over it. "It's that kind of ethic that has to be aban- donned or the humanrace is doomed," he said. • "We can't live separate from each other in a vaccum. Everyone has a role to play." Mr. Andrews noted killing isn't done today for the purposes of survival, but rather for the sheer pleasure of killing. "I'm not saying it's wrong to shoot an animal, but what are our ethics? Why are we doing it? Why should a deer die on a river bank with a bullet in its flank simply because some guy wants to have fun shooting. If it's necessary for these animals to be killed then let's have it done scietifical- ly or by an expert who won't wound them first," he said. "Have we the right to get pleasure out of killing? I don't think any other animal gets pleasure out of killing," he added. "You look at the salmon derbies. The fishermen are out there with their vast ar- ray of equipment to catch one fish, which they wouldn't eat because the water is polhated. They're out there to kill something we're killing anyway because the lake is polluted. The same ethic is behind it." Mr. Andrews said that kind of ethic has to be eliminated. He said children should be taught to have respect for all living things for what they are, not for what they can do for humans.
