3 eggs
1 cup salad oil
2 cups sugar
2 tsp. vanilla
2 cups shredded zucchini
1 cup crushed pineapple, drained
3 cups flour
2 tsp. soda
1 tsp. salt
'/a tsp. baking powder
11/2 tsp. cinnamon
Sia tsp. nutmeg
1 cup nuts, finely chopped
1 cup raisins
Beat eggs, oil, sugar and vanilla'until thick and foamy.
Add zucchini and pineapple. Combine remaining ingre-
dients and stir into first mixture just until blended.
Pour into greased and floured loaf pans. Bake at 350
degrees F for 1 hour. Yields 2 loaves.

Zucchini Pineapple Bread
3 eggs
1 cup Crisco oil
1'/a cup white sugar
2 tsps. vanilla
2 cups shredded zucchini
1-8 oz. can crushed pineapple (drained well)
Mix:
3 cups all purpose flour
2 tsp. soda
'4 tsp. baking powder
1 tsp. salt
11/2 tsp. cinnamon
3/4 tbsp. nutmeg
1 cup raisins
1 cup chopped nuts
Beat eggs, oil, sugar and vanilla until thick.,Stir in zuc-
chini and pineapple. Add dry ingredients, raisins and
nuts. Pour into 2 greased 5 z 7 loaf pans. Bake at 350 deg.
for 1 hour.

Sift together:
2 cups instant blending flour
1/2'cupwhite sugar
tsp.3
Md: baking powder
11/4 cups milk
1 cup Crisco oil
2 eggs
Mix dry ingredients with liquid ingredients just until no
flour can be seen. Do not overmix. Batter will be lumpy.
Mix in 2 cups raisins. Bake at 350 degrees F for 1 hr. or un-
til top is brown.Freezes l
