The Dutch like the salted version but in Holland they're especially fond of "green herring," the first of the season which starts in May. After a few weeks the fish is salted. Try herring on toast or as an hors d'oeuvre. In Holland the best way to eat herring is from a street vendor's pushcart. Grab the herring by the tail, throw your head back and treat your tastebuds to the Dutch delicacy.
