The researchers are using yeasts and bacteria to develop. fermentation pro- cesses which can convert the sugars in. these crops into fuel alcohol faster and in 'higher volume. Seafood is high in protein In the food science laboratories at the University of Guelph, Professor David Stanley is engaged in some clever subterfuge. He is serving, deep-fried squid -- "seafood croquettes" — to un- suspecting colleagues. • Squid is an under-utilized source off, ,high quality proteid, says Professor .Stanley, who notes that squid fishermen are caught in a wildly. fluctuating market. Almost all Canadian squid has, in the past, been ex- Ported xported to Japan, where it provides - a dietary staple that is "prepared 500 ways." When Japanese buyers can get New ' Zealand or Australian' squid at a cheaper price, the Canadian squid often must be dumped. while ethnic restaurants and fish markets offer California squid, Professor Stanley notes. The challenge that Dr. Stanley sees is to create a Canadian .market for what is now a relatively unpopular product. In his laboratory, the University of Guelph food scientist and his assistants blend equal parts of squid and deboned whitefish, another under- utilized species, in a food processor, then dip spoonfuls in batter and bread crumbs and deep fry it. The result is mildly fish flavored, with a Listowel police officers have permission to work. without ties uniform jacket is worn and for court appearances. The grant, which is given by the ministry of citizenship and culture, will be use to develop existing libraries in the county. The money is over and above the $2.50 per capita now ' received ' by municipalities to run their libraries. The funds are given to libraries not operating under a county system. Professor Stanley believes that squid could become important in the programs of institutional dietitians where it could be used in com- bination with such under- utilized species as capelin and krill. His ultimate ob- jective, however, is to see squid in the diet of the average Canadian family. Giant squid, caught off the coast of Lower California, is sold across the United States as Grande Calamara in steaks_. and. scallop -shaped cut-outs, Canada has always been more conservative than the United States in eating habits, says Professor Stanley, but "When squid is selling in Boston, Canadian consumers just need a little push." • BAILEY Real Estate Ltd. Ontario Ministry of Government Services Dr. Kosaric has received $150,721 to investigate "free cell" fermentation systems in which the bacteria or yeast cells are allowed to float freely and react with the sugars during • the fermentation process. This Method is the tradi- tional fermentation process used for the industrial pro- duction of fuel alcohol. Dr. Kosaric's research 'team, is working on new methods and ways to in- crease the alcohol yield and reduce the time it takes to ferment the ethanol. • An optimum farm scale and industrial scale plant will be designed. Dr. Margaritis has been awarded $158,526 for further work on a novel fermenta- tion process known as an im- mobilized cell method in which the bacterial cells are entrapped in small, spherical, bead-like par- ticles. These porous particles, which contain a high concen- tration of cells, chew up ricultural fields sugars and convert them in- to alcohol at much faster rates than the traditional fermentation mbthods using free cells, according to Dr. Margaritis. The purpose' of the project is to compare the two systems in terms of technology, feasibility„ and costs. Ethanol can be used in the family car without vehicle modification when it is mix- ed ixed in a 10 to 20 percent ration with gasoline. Gasohol, as it is commonly known, is wide- ly used in the mid -western United States. With some Modifications, automobiles can also run on 100 percent ethanol. The advantage to fuel alcohol is that it comes from a renewable resource rather than a depletable petrochemical resource, say the two researchers. Jerusalem artichokes are of particular interest, because they can grow 'in marginal soil, don't need fer- tilizer, are resistant to com- mon plant diseases, and con- tain one of the highest car- bohydrate yields when ctm- pared with ether conven- tional crops. Alcohol can also be used to replace petroleum as a raw material for the production of ethylene and . other chemicals that are used for making petroleum-based products, including plastics. Dr. Kosaricts research team has done extensive work over the past several years on .improving ,free cell fermentationof fuel alcohol. The costs of producing fuel alcohol from Jerusalem ar- tichokes has been estimated at -$1.60 per gallon for a 100,000 -gallon fermentation facility, but about 77 cents a gallon for a 1,000,000 gallon fermentation facility, depen- ding on the cost of the raw materials_ Other researchers involv- ed in Dr. Kosaric's project include Dr. Andrzej Wiec- zorek, a visiting research associate from Poland, research assistant Shelley Kliza, and several graduate students. Dr. Margaritis' team is working on what he describes as "truly novel fermentation technology" which has the potential to ferment in eight hours or less the same amount it would take 48 to 72 hours to ferment using traditional methods. He said that research done over the last several years has indicated that smaller, snore energy efficient fermenters can be used to produce higher rates and yields of alcohol. The immobilized .cell technology also has possible applications in other areas of biotechnology such as specialty chemicals, waste treatment processes, food processes, production of an- tibioticsand a wide variety of pharmaceutical products, Dr. Margaritis said. Others involved in Dr. Margaritis' project for Agriculture Canada include research associate Dr. Michael Channon and research assistant Chris Brown. 0 GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK GK OK GK -0 0 G 0 G G FIRST TIME HOME BUYERS GRANT APPLICATIONS 0 0 t7 0 E3 t9 0 0 0 -L-'9 0 0 0 0 ----- - WHYRENL..
