It's syrup season!
One of the first signs of
Spring in Ontario occurs
when maple sap begins to
flow. Maple sap is a thin, col-
orless liquid that is only
slightly sweet. Its original
purpose was to nourish the
maple tree for Spring

maple syrup.
Marketing specialists at
the Ontario Ministry of
Agriculture and Food tell us
the maple sap needs to be
boiled down :to make tasty
maple syrup. Thirty to forty
gallons of maple sap are re-
quired to make one gallon of
maple syrup. The syrup is
then filtered and packaged
while still hot for maximum
quality.
When buying pure Ontario
maple Syrup, shoppers
should look for products
labelled "maple. syrup" or
"pure maple syrup". Syrups
with any other names may
contain artificial maple
flavoring.
There is a myriad of ways
to serve Ontario maple
syrup other than to comple-
ment pancakes and waffles.
Flayor milk, egg nog and
other blender drinks, or try
it 'as a glaze on baked
vegetables such as carrots,
parsnips, rutabaga or
squash. And . of course,
maple syrup is delicious
when used to top off such
desserts as baked custard,.

Dairy sold to Labatts
Stacey Bros. Ltd. of Mit-
chell, a family-owned firm
since 1895, has been sold to
Ault Foods Ltd., an Eastern
Ontario firm with plants to
Winchester and Napanee.
Ault Foods Ltd. is part of the
John Labatt Ltd. group of
companies.
The Mitchell dairy, which
employs 85 people, pro-
duces skim milk powder,
butter, evaporated milk and
other milk -based products
sold under Vim,
Willowgrove; Stacey and
other private label brands.
About 200 area milk pro-
ducers sell to the local dairy.
Dwight Stacey, president
of the Mitchell firm, said the
company will continue to be
known as Stacey Brothers

the firm, but after a transi-
tion period, Ronald Stacey

When the ownership
change was announced, the
press release said a signifi-
cant expansion of the Mit-
chell dairy is expected over
the next few years. Mr.
Stacey,said the dairy's lines
will be expanded, and the
firm will go inta.cheese pro-
duction.
Mr. Stacey said he doesn't
know when the expansion
will start at the Mitchell
plant, but it will mean some
expansion of the plant and
the creation of additional
