Peachy keen
Foodland Ontario asked some leading
chefs around the province for their favorite
speedy ways to serve the delectable peach:
Ray McGuire, executive chef at the
Dee -I. -thirst Inn, Huntsville, makes an On-
tario peach butter to serve with french
toast. He combines two pitted and diced
peaches with 1 cup (250 rnl.) softened un-
salted Nutter in a food processor or blender,
until well blended. Ray says this flavored
butter freezes well in individual portions for
later use.
Another of Ray McGuire's easy peach
treats is that old favorite fresh peaches and
ice cream, topped with crushed fresh On-
tario raspberries and a splash of your
favorite liqueur.
For an interesting appetizer or light
lunch, chef Kevin Belanger of The Doctor's
House and Livery in Klelnburg, crushes
peeled and pitted Ontario peaches and
serves there with warm Brie.
Chef Bud Foster of The Jester Arras inn,
Stratford, makes a refreshing sumrner
salad by tossing diced Ontario peaches with
fresh spinach, sliced red onions and
mushrooms. Bud whisks up a simple
vinaigrette dressing flavored with a little
fresh peach puree to drizzle over the salad.
Stephen Ziegler. dining room chef at The
Airlane Motor Hotel. Thunder Bay, believes
in starting the day in style. In his breakfast
croissant. Stephen layers slices of Ontario
peach, sly t'd haul ,Intl cheese, then bakes it
just until the cheese melts.
A suggestion for a refreshing accompani-
ment to grilled poultry comes from
Christopher Gramrnatis, head chef and co-
owner of Trapper's in Toronto. sliced fresh
Ontario peaches marinated in brandy or
peach schnapps
