The beef chuck, or "blade," as we call it in Canada,
has a boneless "eye" that produces an extremely
flavourful steak. To enjoy this cut, I marinate it; you
can make your own marinade with safflower oil,
teriyaki sauce, red wine vinegar, garlic and ginger.
While our limited supplies last, we're also including

I'm particularly fond of the combination of Kiwi and Fresh Strawberries
su we asked Christine Mullen, our unofficial, official recipe developer, to
come up with a unicJue rcipe combining them and our new Insider's
Report "Secret Recipe" shortcake layer. The latter is made exclusively
fur us by Alphonse Dimpflmeier; it's a fully baked sponge layer that
needs only to be slathered with whipped cream and crowned with slices
(Afresh fruit that look great when glazed.

SENSATIONAL SUMMER STRAWBERRY -KIWI FLAN
1.r a heat -proof measuring cup add 1/4 cup (50 uiL) orange Juice.
Sprinkle with 1 tsp (5 niL) untlavoured gelatine (.)R 1/3 packet. Let
,often 5 minutes and then heat over hot water 3 or 4 minutes, or until
gelatine is totally dissolved; set aside and let cn
aul 10 nuutes.
. Meanwhile, beat together 1 cup (250 rnL) sour cream and 2 Chep (25
mL) icing sugar. Add finely chopped zest of 1/4 orange and 1/2 tsp (2 niL)
vanilla, to gelatine -orange juice mixture,md blend thoroughly.
3. Spoon mixture over Insider's Report "Special Rec ipe" shortcake layer
; decorate and cover wirh slices of i peeled kiwifruit and 1 pint (500 nil.)
