The Goderich Garden Club
held a very interesting
meeting at St. Mary's Schou\.

for the year, and the annual
reports that were heard were
a reminder that it had been a
busy year— with a variety of

outgoing president, Mrs. J ean
Burneu.' thanked all those
whA had helped toward the
planning of these activities.
The Junior Gardeners,
under Mrs. Barnett's
Christmas corsages to be
given to elderly shut-ihs.
They brought. alew samples

been beautifully made and
attractively boxed for

used.

RICE CASSEROLE
~/ Makes 4servings)
1 cup wild rice
1/4 teas|t
2 cups diced cooked turkey or
chicken
1/2 pound sliced mushrooms
(about 3 cups) sauteed in 2
'tablespoons butter
1/2 pint 'heavy cream (35 per-
cent)
11/2 cups turkey stock or
chicken stock or 2 chicken
bouillon cubes dissolved in 11/2
cups boiling water
2 tablespoons finely chopped
chives ot' green onion
ztablespoons diced pimento
\tyuapuonsalt
% teaspoon pepper
2 tablespoons grated Parmesan
cheese

water. Stir rice into 3,cupo
hmUing water. Parboil for 5
minutes. Remove from heat;
cover: Leave for 1 hour. Drain.
Wash. Cook rice in boiling salt
water until tender 30 minutes.
Drain the rice if necessary;
place in mixing bowl. Add
turkey and . aaDtuod
mushrooms; toss. Add cream
and stock or dissolved cubes.
Add nhiveo, pimento, salt and
pepper. Pour into, a well -
buttered casserolo,( 11/2. quart) ;

degrees F. Sprinkle with
purmooan, dot with butter;
brown lightly under the broiler.
