They bought a heifer at a cat- tle auction at 39.5 cents per pound for a total, of $363.50. .They paid $2 to buyer at auc- tion, $5. for trucking, $7 slaughtering, and $9 per pound for processing plus 5 cents a pound for the 88 Ib. of hamburg ground up. L The total cost of the beef was $423.65 for 424 Ib. beef and 52 Ib. soup bones. They,,then checked the prices F at eight stores for the equivalent amount of beef and found that it would cost 'tip to $228 more for the beef in these • stores. There was .a 15 percent in- crease in their cost from processing, so it would appear that most of the mark-up bet- ween producer and ,,consumer comes at the ,retail level. Packing houses, of course,. earn extra revenue from the waste products they keep when processing beef. No . part is wasted from the blood to -the hide.
