Chicken broilers make tasty casseroles which can be en-
joyed the same day that they are prepared or frozen- for
later enjoyment. The home economists, Agriculture
Canada, recommend "Chicken Tetrazzini", "Sweet and
Sour Chicken" and "Chicken in Tomato Sauce" for
freezing.

then rewrap it in -moisture-
vapor proof paper and return to
the freezer.
When `ready to serve. it is not
necessary to thaw frozen
casseroles. *Simply unwrap,
plat -c in greased baking dish,

350°F for a six -serving quantity
or 11.1 hours for a.three-serving
quantity. Uncover and add the
topping during n the last ten
minutes Of cooking
Casseroles will retain their
flavor and aplrearan'ce for at
least three months when kept
at a temperature of O°F. After
this time, the quality of the
food may decline but it will be
still safe to eat if it has keen
kept frozen.-

Chicken In Tomato Sauce
Cups (1(2 pound) slic,ed
mushrooms
1 cup fat
1 cut-up chicken broiler (about
:1 pounds)
1 clove garlic•, crushed
l 19 -ounce can tomatoes
I 71'' - ounce can tomato sauce
1 medium onion, cut in rings
''" teaspoon, salt
teaspoon pepper -
'14 teaspoon tarragon
2 tablespoons chopped parsley
Saute mushrooms in 1
tablespoon' fat. Remove
mushrooms from pan. Add
remaining fat and garlic and
(brown chicken about 15
minutes. Drairf excess fat. Add
next six ingredients. Cook un-
covered until chicken is tender
(about 45 minutes). Add
mushrooms and parsley. 4 ser-
vings.
FREEZING: (Fool, package
and freeze cooked chicken. To
serve reheat, covered, 2.. hours
at 350°F. for a 4=serving quan-
tity or 11/4 hours for a 2 -serving
quantity

1 cut -Up 'chicken broiler (about
:3 pounds)
Dash salt, pepper and nutmeg
2 tablespoons fat
1'' cup chopped onion
1 14 -ounce can pineapple tid-
hits •
t14 cup syrup from pineapple
'2 tablespoons cornstarch
1!1 cup brown sugar ' `
1 ' teaspoon salt
17 cup of vinegar
1r•1 cup soy sauce
2 cups -chicken bouillon
1 cup long grain rice, uncooked
1 cup celery sliced diagonally
1 cup green pepper cut in
chunks
Green pepper rings.
Season chicken, brown in hot
fat about 15 minutes. Remove
chicken, 'drain all , except -1
tablespoon fat, from pan. Add
onion and saute until tran-
sparent. Drain pineapple, save
syrup. Combine syrup with next
five ingredients, add to onion.
Stir and cook until thick and
clear. Place chicken in greased
baking dish. Combine bouillon
and rice; add celery, green pep-
per and pineapple, and add to
onion mixture. Pour over
chicken, cover and hake at
350°F until chicken is tender
and rice is cooked (about 1
hour). Garnish with green pep -
pet rings.._4, servings.
FREEZING: Omit green pep-
per,,,, ,r -Ings,.. Cool package and
freeze cooked casserole. To
serve, reheat covered 2 hours at
350°F for• a 4 -serving quantity
or 11/ hours for a 2 -serving
qurintity.
