Nothing like rutabagas
A Food specialists at the. On-
tario Food Council, Ministry of
Agriculture and Food agree that
Ontario rutabagas are at their
best right now, following the
first frost. '''op qualit'V
rutabagas are well,formed,
reasonably smooth and firm,
and heavy for their size. In On-
tario theyare'characte,rized by a
round yellow body with.a.wide,
deep -purple mantle and fine
yellow flesh. Since this delec-
table vegetable is. available in
carious sizes, it iseasy for "the
consumer to select according to
family requirements.
Rutabaga adds color to your
menu•_ while the mild, sweet
flavor -teams -up well with pork
chops, pot roast,• .shoulder of
lamb and 'roast turkey or fried
chicKep. N pntario futabaga is a
go&ct'"'mixer, it combines well
with, potatoes, carrots, applies
arid other vegetables for a
variety of colorful ” and in-
teresting dishes.
Put the following recipe on
your menu. It's a great com-
bination!

ples in a greased 2 -quart
casserole, beginning -and ending`
with rutabaga. 'Mix flour, brown
sugar, and butter until --crumbly.

Greenhouse tomatoes, please,
Vine -ripened, Ontario
greenhouse tomatoes are now
available, to food shoppers.
Their bright color and delicious
flavor are a mealtime bonus,
say food specialists at the On-
tario Food Council, Ministry of
-Agriculture and Food.
(sreenhouse tomatoes-afe left
on the vineuntil flavor is at -its
best. , and''are picked when red,
;yet still slightly. underripe. If
the tomatoes you select are not
fully colored,” wave them at
room temperature (60 to 70°)
for a day or two. Keep then
away from direct sunlight, as it
is temperature and not sunlight
that is the important factor in
ripening.
I£ is important to remember
that grfenhouse tomatoes are
grown in a warm temperature.
Any _ temperature belpw 55°
tends to affect the flavor of this
tender fruit.- Prolonged
refrigeration causes tissue
breakdown and the tomato
becomes-w'Rtery. 1-Iowever, iyoi1
could refrigerate them for a
half .hour. before serving...
