When we use the term late supper, 9e don't mean it's late be-
cause your husband hasn't arrived home from the office yet.
In"some European countries, among many families, it is con-
sidered de riguer to have dinner served quite late in the
evening.
In the skiing villages of the French Alps, after a strenuous
evening of schussing and stem-christieing, a hotbowlof French
Onion Soup, some garlic -flavoured French bread, and a Caesar
salad is the perfect combination for climax to a full day. The
same holds true for Canada's skiing fraternity.
.Onion Soup
1/4 cup butter or margarine
1/4 teaspoon pepper
4 large onions, thinly sliced
4 cups beef stock
(4 bouillon cubes dissolved
in 4 cups boiling water)
6 slices toasted French bread
6 tablespoons freshly grated
Parmesan cheese
Saute onions in butter until tender, stirring to separate into
rings.
Add stock and pepper to onions, bring to a boil.
Add salt and lemon juice. .
'Place a slice of toast on each serving and sprinkle with- 1
tablespoon cheese. • s
Servings may be placedctunder the broiler for a short time until
cheese bubbles.
French Bread
Makes,great eating with Soups and salads.
Method:
' Cut the loatin diagonal 1 inch slices. '
Spread each side of each slice with melted butter seasoned
with garlic. powder or mixed with crushed garlic.
Wrap tightly in foil and heat in a 275°Foven for 30 minutes,
A Great Caesar Salad
Serves 6
12 cup salad or olive oil 2
2 tablespoons lemon juice - 1
1 tablespoon Worcestershire 1
sauce 1f4
1 teaspoon salt tea

'✓4 cup'grated Parmesan cheese 1
Add garlic clove to oil 24 hours before using. •
Remove garlic and combine 1/4 cup 12 i with lemon juice,
vinegar, Worcestershire sauce, mustard, salt and pepper.
Cut anchovies into small pieces, save a few for garnish and
add to dressing.
Tear romaine into pieces and add dressing and cheese.
Toss lightly until romaine is coated.
Break egg into salad and toss until well mixed.
Sprinkle croutons over,salad, mix'lightly, serve immediately.

Trim crusts from 4 slices enriched white bread,. cut into 'h
inch cubes. . '
Fry in 1/4 cup oils' add garlic powder or garlic bud to taste,
stirring constantly until brown and very crisp:

Christmas cake
Since Christmas is but a few
weeks away, select your favorite
fruit cake recipe, and plan on
baking your Christmas cake
now or early in November to
have it rich and flavorful foil'
Christmas time. Keep these
pointers in mind, suggest 'food
specialists at the Ontario Food
Council, Ministry of Agriculture
and Food. You'll be delighted
with the results. ' .
Whatever type of cake you
plan to make, study 'the recipe
carefully. It is generally not ad
visable to double the recipe, 'as
this may prevent proper blen-
ding. You may substitute fruit
ingredients, but always be sure
-that then total- weight : of - fruit ais
the same as called for in the
recipe. ,Small dried . and glace
fruits are usually left whole.
Larger.: fruit- arld---nuts .such
candied cherries, pineapple and
walnuts should be chopped to
allow for even distribution of
fruit and to ease the cutting of
the finished cake. Candied and
dried fruits are easily cut with
scissors dipped in hot• water or
flour.
Use corrugated cardboard,•.ct>;t
to fit the bottom and sides. of
pans. Cover with two layers of
ungreased aluminum foil, or one
layer of greased brown paper.
Fill cake pans no more than
two-thirds full, press batter well
into corners.
Baked cakes, once removed.

brandy or , fruit juice once a
Week. After a mellowing period
of -4 to 6 weeks, fruitcake stores
well in refrigerator or freezer.
When freezing your fruitcake,
Use freezer tape to seal the edges
of the foil wrapping.
