DAY. QF .BREAD
There are few holidays which apply to all Canadians. Thanks-
giving is one of the exceptions.
The first Thanksgiving in North America that the Pilgrims
celebrated was much different than our celebration of today.'
The Pilgrims, with the help qf• it^iendly Indians, turned their
available foods into appetizing dishes. Some of these still re.-,.
main, though to slightly different forms.
Remember when planning your menu that turkey, cranberries
and pumpkin' are the traditional foods of Thanksgiving.
Both the bread for the turkey stuffing or ready-made stuffing
and pumpkin pies are available from your local bakery or super-
matket. We certainly have a much easier time preparing
Thanksgiving dinner than our forefathers.
October third, 1972 is a special day for Canadians -the
Tuesday of Harvest Festival Week, just before Thanksgiving Day
-because it is the International Day of Bread throughout the
world, and being celebrated for the first time in Canada.
Orange Pumpkin Pie
1 baker's pumpkin pie• • fresh orange sections
1, pint whipping cream grated orange rind
sugar to taste.
Whip cream, fold in last 3 ingredients.
Thanksgiving Pie
1 baker's pumpkin pie Rum Butter Nut Sauce
1 -pint whippinc3 r rP�trt Whippest
Rum Butter Nut Sauce
Yield: 11/2 cups sauce
1 . tablespoon cornstarch
1;3 cup sugar (brown)
1/2 teaspoon salt
2 tablespoons water
1 egg yolk, beaten,
1' 2 teaspoons butter
11/2 teaspoons lemon juice
. 1/2 teaspoon grated lemon rind
2 teaspoons rum
1 egg white stiffly beaten
1/2 cup chopped nuts
Combine first 4 ingredients in top of double boiler; cook over
hot water until thick, stirring constantly.
Gradually add cornstarch mixture to beaten egg yolk, return
to pan, cook 5 minutes stirring constantly; remove from heat,
add butter, cool,
Add lemon juice, lemon rind and rum.
Fold beaten egg White into sauce; mix in nuts.
_Serve hot or cold over pumpkin pie.
Walnut -Apple Stuffing
Yield: 6 cups
112 cup butter
1 cup'walnuts, coarsely chopped
t%x cup,chopped onion
1/2 cup' chopped celery
4 `cups dry bread crumbs
2 cups peeled and diced
tartapples
1/4 clip chopped parsley
Salt, black peppt.r460a4

Broth or cider

Saute walnuts, onion and celery 5 minutes.
Add next 3 ingredients and seasonings, mix well.
Moisten as necessaiy with cideror broth.
Refrigerate, until ready to use. 0
Use. to 'stuff turkeysdr bake in muffin cups in a 350°F oven for
25 minutes.
Cranberry Sauce '
1 pound 4(4 - 41/2 cups) cranberries 2 cups sugar
2 cups water a
Check over berries, discard soft ones and any stems.
Wash well, place in large'pot with 2 cups water and sugar.
Bring., to boil, 'cook 10 minutes or until berries have popped
Open. .
Skim foam from sauce — pour into 4-5 cup mold and chill
thoroughly. 0
Note: 1/$" ,,cup grated orange rind may be added with the
cranberries.

Gouda Divan

not become ropey or stringy in
the sauce and forms a good
crust when broiled.
' 1 bunch broccoli
6 large slices cooked turkey
salt and pepper
1 cu cooked rice
(1/3 cup raw)
2 tablespoons butter
tablespns flour
i cup milk

Holland Gouda cheer

large amount of water. Refresh
with cold water and drain.
Arrange -turkey -in -the -bottom,-..--
of a large, flat casserole. Spoon
well -seasoned rice over turkey.
(Rice tastes batter if cooked in
chicken stock). Place broccoli
spears on top. Season with salt
and pepper.
Melt butter. When bubbling
add flour. Cook and stir for a
moment or two,.>` king care not
to let it brown, urn off heat
and add milk. Beat until
smooth and cook over medium
heat .until thick. Season with
salt, pepper and nutmeg. Fold
in 10 ounces grated Gouda
cheese. Pour sauce over broc-
coli and sprinkte with remain-
ing Holland imported Gouda
cheese. Bake in a 375° oven (or
30 minute'§: then brown .cheese
under,phe broiler.
Serves 6.
