Indeed,.lettuce was one of the first vegetables to be grown on our continent, .being brought here by the early French and Spanish settlers.„Today there is three timesmuch lettuce consumed in Canada as there was twenty years ago. This has been attributed to the popularity of salads. Salad ingredients can be prepared ahead 8f time whether they are to be eaten at the - dining room table, on the patio or taken on a picnic. Several types of lettuce and other leafy greens will lend color and texture variations to a tessed salad. Select the greens and wash them thoroughly to remove all soil • or possible spray residue. Drain well, ,break greens , into bite -sized pieces, then place them in . a plastic bag. Other ingredients such, as celery, cucumber, radishes, green onions etc. can be washed, prepared and put in plastic bags. If they are to be transported beyond your own back yard they may be packed in the picnic hamper if there is ,no room , in the cooler. Tossed salads are better combined at the t'd'estination, so don't forget the salad bowl and servers. Each person can add the dressing he . Just why they are rising has yet to be stated with any degree of clarity. (Certainly the argument that it's the barbecue season is not a .valid one.) However, while the arguments and complaints go on, the consumer can get around the high price • road -block inAa number of ways.' There are substitutes for beef from a healthy diet point of view, but the fact of life that cheaper Cuts of beef can be utilized is more important. While Canada's Food Guide says there should be one serving of meat per day, the equivalent - food values are available in dried peas and beans in such things as' _ chili con carne, beans with pork and split pea soup. Then there are fish, 'eggs and cheese for meatless dinner ideas, but they all need a little cookbook research on the part of the consumer to make sure they are prepared in novel and appetizing ways., There are several so-called "variety" meats that are high in food value and comparatively low in price. They include heart, kidney, liver and tongue. If the family brought up in a steak and roast atmosphere doesn't like these names, think yup some new ones. • Expensive' stewing beef can be replaced by chuck which you cut up yourself. Lower priced cuts, if, cooked slowly in a covered pot, will be equally, nutritious and tasty as a "top" out. Shoulder,. round bone •and blade roasts are usually lower in price. One nutritionist points out that tom get the most. :for your money you 'should learn to use everything you buy, such as using the bone from a rib roast for soup, making a blade roast into a pot roast with tomatoes. Wichita telephones are not provided by the county; the area is served by the Southwestern Bell Telephone Company. Telephone linemen do not go "searchin' in the sun for another overload". Writer -composer Jim Webb's secretary says Webb is not a technical man and intended to write about a phone lineman but if power linemen wish to appropriate it, that's "groovy" with him too.
