vegetables can provide!
With this in • mind the home
economists of the . Canada
Department of Agriculture have
selected three recipes fromtheir
new booklet featuring canned
vegetables.
"The Sausage and Corn Cut- chiicken in serving -size
Casserole" lends itself to pieces, sprinkle with salt and
advance preparation. Cooked pepper. Brown in hot oil, about

1 clove garlic, crushed
1 can (28 -ounce) tomatoes
1 teaspoon turmeric
1 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked rice
A real lunchtime shortcut is
the "Quick Eggs a la King,"
especially if the eggs are
hard -cooked beforehand.
Because eggs ,are often abused
when it come to hard -cooking
them,,,, the home economists at
the Canada Department of
Agriculture remind you that eggs
can be 'hard -cooked without
boiling them. Cover the eggs
with water and bring rapidly to.a
boil. Set pan off heat, or •if
cgloking the six eggs required for
this recipe, reduce heat and keep
water just below simmering. Let
stand 20-25 minutes. Chill the
eggs immediately in cold water
arrange: chicken on top. Cover
and bake at 350 degrees Fa, until
chicken is tender about one and
one-quarter hours. Six servings.
QUICK EGGS A LA KING
'/a cup chopped onion
1 tablespoon butter
1 can (10,ounce)
mushroom soup
1/3 cup Milk
1/8 teaspoon salt
Dash pepper
1 cup cooked peas
6 hard -cooked eggs, cut in
eighths
2 tablespoons chopped pimiento
(optional)
Saute onion in butter until
transparent, about five minutes.
Add soup and milk, stirring until
smooth. Add peas, eggs and
pimiento. Heat thoroughly and
serve on toast. Four servings.

2/3 cup sugar
1/2 lemon, thinly sliced

Bring rhubarb and water to
boil. Cook until very soft, about
10 minutes. Strain, add sugar
and stir until dissolved. Tint
with one or two drops of food
coloring if desired. Potir over
sliced . lemon. Chillthoroughly.
Makes about 5 cups.
RHUBARB SALAD JELLY
5 cups rhubarb (Winch pieces)
2 tablespoons water
2/3cup sugar
1 envelope gelatin _ (1
tablespoon)
'/a cup cold water
Red food coloring (optional)
Combine rhubarb, two
tablespoons water and sugar.
Cover and cook gently until
rhubarb is very tender, 10 to 15
minutes: Press through sieve.
}Soak gelatin in cold water, five.
minutes. Measure one and one
half cups rhubarb juice, reheat if
necessary. Add gelatin and stir
until dissolved.- Tin'vith one or
two drops food -coloring if
desired. ' Pour into individual
molds and chill until firm. Serve
as part of a fruit salad' plate.
Makes six individual molds.
RHUBARB CUSTARD PIE
Pastry for 1 -crust pie (9 -inch)
3 cups sliced rhubarb (1/2 -inch
pieces)
1 cup sugar
3 tablespoons flour
Dash salt
2 eggs, beaten
2 tablespoons milk
1 tahlespoon butter
Line pie plate with pastry.
Mix 'rhubarb, sugar, flour and
salt. Combine. beaten eggs and
milk with rhubarb mixturs, Turn
into pie shell and dotr' with
butter. Bake at 450 degrees 'F
for ,10 a minutes.. Turn oven
control to 350 degrees F and
continue baking until rhubarb is
tender and custard set (35 to 40
minutes).
Warm spring rains and

sleeping rhubarb roots to new
life once more. Field or garden
rhubarb is replacing the slender,
rosy stalks of the hothouse
variety. It is more acid than the
hothouse type. For this reason
more sugar is needed to sweeten
it. However, the redder stalks
generally require less sugar than
- the greenish ones.
When buying rhubarb choose
firm,- . -crisp, - tender and
well -colored stalks. Avoid stalks
which are wilted or have dried or
discolored ends. Rhubarb is best
used soon after " purchase.
