As incongruous as it may seem, only one hundred years ago house- wives were still toting water, stoking the stove, and literally keeping the home fires burning. The kitchen was the scene of the Saturday night bath, the Monday wash, and the Tuesday ironing. "Luxury" kitchens were first seen in monasteries. By stan- dards of the day, they were elaborate ... a kitchen for baking bread, one for cooking meats, one for preparing poultices and ex- tracting medicine from plants. Then there were the colonial estates, where the kitchen was lo- cated behind the main house in an outbuilding. The separation of the kitchen from. the "living" part of the house was indeed a wise move, since refrigeration and trash removal were inadequate and the aromas were not the most pleasant. In North America radical changes began after the Ameri- can Civil War. Probably one of the most profound in the kitchen area was the development of the cast iron stove, which facilitated cooking, but at the same time gave off such an intense heat that it was almost unusable during hot summer months. 1! In the late 1880's the oil range was introduced, followed by the electric range in 1910. Kitchen cabinetry was affected by Post -Civil War technology. Dry sinks, hutches and pie safes, which had been crafted by the home owner or by a local crafts- man, gave way to the "Hoosier cabinet" which was produced en masse in a factory and distribut- ed by peddlers. Usually of oak or maple, stained or painted white, the Hoosier often had poreiain enamel or marble work -top and white ironstone knobs. Installed -on-the-job storage cabinets gradually replaced open shelves, and base cabinets Were used to enclose the sink. Wooden boards, covered with linoleum or - ceramic tile created continuous counters. The concept of built-ins was given additional impetus from the cabinet sink . . white enameled metal cabinets and cabinet sinks, mass produced and mass merchandised . . . which Dress windows with plant life If you want to break away from traditional window coverings like cur- tains and shades, try a lively and exciting look: plants. A do-it-yourselfer could put several rows of shelves, spaced six to eight inches apart, over the window. The carpentry involved isn't difficult. Add a generous collec- tion of sun -loving plants, in all sorts of varieties, and you have a beautiful window design, some pri- vacy for yourself, and healthy greenery enjoying lots of sunlight. They offer cold water without opening a door. They make ice cubes and store them for handy use. Even time-consuming cleaning chores are eliminated with "frost -free" models. Ovens now cook the evening meal with a flick of the wrist in almost split-second timing, via the microwave. And the dirty - gloved messiness of cleaning is almost a thing of the past, via continuous and self-cleaning models. Dishes, pots and pans are now washed or even scrubbed by the top to bottom, side to side action of new dishwashers. Even waste can be eliminated. No longer does the housewife have to beg husband or son to take the garbage bags out to the garbage can. Disposers and com- pactors sake care of waste materials, either grinding them down or fitting them into an easy -to -maneuver - sized pack- age. No longer do kitchens need to be located away from other "liv- ing" parts of the home. Ventila- tion hoods now prevent grease deposits from accumulating on cabinets and walls and keep the kitchen air cool and fresh. Lighting, oncenever con- sidered as an important factor, • now gleams as a bright star.
