Chicken dishes are
a favorite everywhere

Chicken is one of the most
international of the world's
meats.
Besides being versatile,
chicken now has the added as-
set of being among the more
economical meats. Among
countries featuring chicken
° frequently in favored recipes
are France and the Orient.
Unlike the United States,
where chicken is usually
roasted, fried or barbecued,
the French have an almost
endless number of chicken
dishes. Regional favorites
vary from the rich, creamy
Chicken Normandie in the
North, to the spicy, tomato -
bases based dish typical of
Provence, located on the
Mediterranean.
In the province of Burgun-
dy, Poulet a la Diable is a fa-
vorite. Dijon Chicken is a ver-
sion of the French favorite.
Celestial Gold Chicken is a
version of a Chinese delicacy.
It features stuffed, rolled
chicken breasts in a rich
cream sauce.
CELESTIAL
GOLD CHICKEN
Yield: 8 Servings
4 large chicken breasts,
split, skinned and boned
Salt and pepper
2 eggs, slightly beaten
1.tablespoof water
Fine dry bread crumbs
0'w -third cup butter
Fling:
2 cups finely shredded. cab-
bage
'14 cup finely chopped green
onions
V4 cup ('fix stick) butter
1 cup chopped, drained,
rinsed bean sprouts
1 cup finely chopped water
chestnuts
11/2tablespoons chopped pi-
miento
1 teaspoon salt
2 teaspoons sugar
1 teaspoon dried basil
leaves

1 clove garlic, minced
2 tablespoons butter
% cup chicken broth
`1 cup whipping cream
2 teaspoons soy sauce
3 tablespoons flour
Chow' mein noodles
For Fig: Cook cabbage
and green onions in butter un-
til tender, about five minutes.
Add remaining. ingredients
for filling; heat until hot. Cool.
Cover each chicdken. breast
With plastic wrap; flatten
with flat side of meat pounder
or rolling pin to -inch thick-
ness, taking card riot to tear

A. Rub these spots with acloth
dampened in turpentine or
mineral spirits, using a circular
motion while rubbing. Dry With
a clean cloth.

the ends. Dip chicken in flour,
shaking off excess. Next dip in
eggs and water which have
been blended together; then
in ,bread crubs, coating well.
Brown in butter in skillet. Ar-
range in greased baking pan.
For Sauce: Cook onion and
garlic in butter until onion is
golden, about three minutes.
Blend in 1 cup broth, cream
and soy sauce. Pour sauce
over chicken. Cover and bake
at 350 degrees for 45 minutes.
Remove cover and bake 15
minutes more or until tender.
Remove chicken to serve
dish; keep warm. Combine
remaining y cup chicken
broth and flour; mix until
smooth. Blend into -pan -juices.
Cook over mediurn heat, stir,
ring constantly, until thick-
ened. Pour over chicken. -
Garnish with chow mein
noodles.
DIJON CHICKEN
1 cup Dijon mustard
2 tablespoons minced shal-
lots
teaspoon tarragon
leaves, crushed
irs teaspoon liquid hot pep-
per sauce
5 tablespoons melted mar-
garine
1 (23/4 -pound) frying chick-
en, cut up
3/4 cup fine dry bread
crumbs
In small bowl, blend to-
gether mustard, shallots, tar-
ragon, hot pepper sauce and 1
tabelspoon melted marga-
rine. Spread mixture over
chicken pieces. Coat with
bread crumbs. Arrange
chicken pieces in baking dish.
Drizzle remaining four table-
spoons melted margarine
over chicken.
Bake at 375 degrees F.
about one hour, or until done.
