Foods served in Israel are
just as international as are.
foods to be found in this coun-
try, says Maurice Mizrahi,
who came to this country
from Tel Aviv in 1961. .
"It's because there is such a
. flow of immigration to Isra-
el," he explained.
Mizrahi, who cooks "for re-
laxation,".says his own brand
of cuisine reflects the Many
countries where he has lived,
including Egypt, Syria and.
Lebanon, .

cuisine with what she calls
"plain midwestern food."'
"I'm just a girl from' Kan-
sas," she said. "I cook plain
food of the plains."
The couple met three years
ago when Mizrahi, then asso-
ciated with a business ma-
chine firm, went to the Unity
church where his wife works
as a secretary to repair a nia-
chine.
The Mizrahis now own a
specialty gourmet coffee
shop, "Coffees of the World,"
on the West Coast.
In a visit to their little fra-
grant - with - coffees - and -
spices shop, I sampled some
of Mizrahi's best .culinary ef-
forts and ' tried to transcribe
some . of his recipes.
The latter was not easy for
his directions were of the
"add a pinch of this and a
handful �f that" variety.

Place eggplant in oven ' (un,
peeled), and bake until it be-
' gins to feel soft. Cool. Remove
the black outer skin. Cut up,
removing seeds if necessary.
Chop fine in blender or grind-
er. Add tahini and mix to a
paste consistency,
with water if necessary. thinning
lemon juice and salt to taste.

Cut zucchinis across mid-
dles. Hollow out the centers of
the tomatoes and zucchinis,
saving the hollowed -out part
for sauce. Season ground
meat. Stuff tomato shells and
hollowed -out zucchini with the
meat. Use the leftover.meat to
make meatballs. Place vege-
tables and meatballs in deep

Hanging herb
brightens kitchen

My column today deals with
a problem area in our kitchen
and how we solved it.
We A, have a Pullman -type
kitchen, a long, narrow one.
Over the kitchen sink was our
problem spot -- a blank space
surrounded by the usual cabi-
nets on both sides and a cov-
ered light fixture above. The
area measures 93/4 ' inches
across and 31 inches 'high. We
thought of many ways to treat
this area, but none seemed as
good as a hanging herb gar-
den.
To make ours we used soft
▪ pine board cut 93/4 inches long.
1 decorated this board by
making a one -inch wide pencil
line border, on the line 1 used
a bottle top as a guide to draw
an evenly spaced scalloped
pencil line border ( Fig. 1).
When all lines were evenly
drawn, I went over them with
a brown felt tip marker, then
erased all pencil -lurks. To
antique my board I used an X-
ACTO blade (sharp knife will
also do) to round the corners,
make gouges and cut crack
lines at both ends (Fig. 1).
When this was finished. I de-
cided on types Wherba and
the number I would have. We
used`seven. I then measured
to evenly space where the
hangers should go on the
board and made ' a pencil
mark for each. Centered over
'each mark I wrote the name
of each herb using -the same
brown felt tip marker. The '
next step was to varnish the
board -
While the varnish dries,
straighten coat hangers, one
for each plant; when all were
straight I formed a small loop
at one end and a loop large
enough to fit a three-inch cla
pot at the other end (Fig. 2). I
spray painted the coat hang-
ers to match the color of the
walls, planted the three-inch
clay pots and presto -- an
herb garden as well as an at-
tractive wall hanging, thus
solving our problem in a func-
tional, useful manner.
If you have a, problem area
or even a patio wall this could
be an inexpensive answer.
Another suggestion might be
to .make macrame,. hangers
and stagger the plants by us-
ing curtain rod hangers which
are longer than cup hooks
(Fig. 3). Thus you could have
more pots. In any event, plant
a garden and watch it grow.

about prolapse?

My mother has what the
doctor calls a "prolapse" of
her blacker and her bowel
She has had this ever since
Ter tedc .hild was born. Rthe
says she never wants an .oper-
ation, Doctors have tittedter
withdifferent kinds of things
to hold the prolapse back, but
they never seem, to work very
well and often fall out. Is there
something you can suggest?
Prolapses are due to a
relaxation of the muscles and
ligaments thatsupport the fe-
male organs in the pelvis.
This condition maY be due,
rarely, tasotane defect a wom-
an is born with, and, more
comurignly, to aging of the tis -
saes, or -to strains from child-
birth -- long labors, large ba-
bies, tissue that is just not
able to stretch and return to
its former shape.
• ,Before the development of
s 'cal repairs' and new
anest tic techniques, women
and doctors used their ingenu-
ity to hold these prolapses
back because they do cause a
lot of "dragging down" dis-
comfort and backache. Also,
there may be difficulty In
emptying the bladder and
rectum and, in the case of the
bladder, a pool of urine left
behind means probable infec-
tion. '
Some women used simple
cloths and pads to hold the or-,
gans back. Others, who went
to doctors, were fitted with
various types of pessaries of
hard and soft rubber and plas-
tic. Foreign objects are al-
ways irritating to the vagina
and have to be removed and
replaced often. Some can be
manipulated by i the woman
herselfd some have to be
changed by the doctor.
Pe"ssai'ies are a nuisance to
the woman concerned, but are
better than nothing and better
than the treatment prescribed
in some African and Arabian
communities where, after de-
livery, the vagina is packed
with salt to cause shrinking
and scarring of the tissues. It
is obvious that later inter-
course and deliveries are very
painful, .br4.evvert" impotoible,:
When there are no physical
reasons why a woman should
not tolerate an operation well,
the best treatment is surgical
repair. With .the newer anes-
thetic techniques, many el-
derly women, who formerly
were not strong enough to
stand the surgery, can now be
operated on.
If your mother does not like
the idea of surgery, the only
course open to her is to keep
trying the various gadgets un-
til she finds the one most com-
fortable for her. Some wit
once said that the 'treatment
of prolapse ' was to stand on
your head! It is true that lying
down with the foot of the- bed
elevated is an old home reme-
dy and it does provide some
temporary relief.
Q. Will stopping my menses
stop my pre-menstrual symp- .•
toms of crankiness?
A. First, I would like to
know, how are you going to
stop your menses? By haVing
one baby after another? By
hysterectomy? By hormones?
By so-called ``menstrual ex-
traction?"
Menstruation is the 'end re-
sult of a series of hormonal in-
teractions and they them-
selves are under control of the
central nervous system. A few
women, have severe shocks
and menstruation ceases for a
time.
So, stopping your menstru-
ation probably will not in it -
self get rid of your pre-men-
strual symptoms. You would
