Mrs. Tom Hartzog of Mem
P141, Tenn., has always liked
to cook and eat good food.
This love of good food led to
a restaurant resines for Mrs.
Hartzog and her husband. The
couple and their partner, Den
Wortman of Beverly Hills,
Calif., have just opened a Vic.
torian-style restaurant,
"Backstage," adjacent to the
Off-Broadway Theater which
they operate in San Diego,
Calif.
Mrs. Hartzog says that for
the past few months, she has
been "keeping the planes
busy between San Diego and
Memphis."
"My husband has been so
busy with the theater, he has
left much of the planning of
the restaurant up to me," she
said. "Besides the theater
business, my husband keeps
his hinter alarm company
under control in Memphis."
Mrs. Hartzog says that
many of the dishes to be fea-
tured on the menu of their res-
taurant are ones which they

To make One, you will use
any largeglass container
from a one -gallon NO ta a
gallon water cooler bottle,
colored stone for the bottom,
small plants (depending on
size) fish, preferably guppies
or small goldfish and a small
catfish (to keep the aquarium
clean), also a lamp; lifting
made for bottles, found at
hardware stores.
In order for air to get into
the bottle, F suggest a labora-
tory bottle stopper be used in-
stead of a regular cork. This
type of cork -has more than
one hole, se that one hole will
be used for the threaded pipe
that holds the lamp socket and
one hole will allow some air
into the glass container.
These corks • or stoppers are
readily obtainable from medi-
cal suppliers found in the yel-
low pages, or your local drug

as good as we thought they
were, we tested,„them on
friends," Mrs. Hartzog said.
Mrs.. Hartzog's love of cook-
ing led her to take a course in
French cuisine following her
marriage.
"After I conquered the souf-
fle, I felt that I was ready for
anything," she said.
Mrs. Hartzog says that even
though she is a southerner,
she considers most southern
cooking unsatisfactory:
"Most of the food is over-
cooked, particularlythe vege-
tables," she declared. "And
often they are overseasoned
to make up „for the lack of
flavor."
One of the dishes to be fea-
tured on the restaurant menu
is one which Mrs. Hartzog of-
ten serves at dinners in the
Hartzog home in Memphis,
Escoffier Beef..
ESCOFFIER BEEF
Eye of round, rump roast of
beef (or slinilar cut)
2 large carrots, sliced
2 large onions, sliced
Several stalks of celery,
sliced
3.4 cloves garlic, chopped
(may use less)
1 bottle red wine4such as
mountain red burgundy)
1 stick butter or margarine
Marinate roast in wine in
covered casserole in refriger-
ator overnight. When ready to
cook, remove from refrigera-
tor and let it return to room
temperature. Brown carrots,
onions, garlic and celery in
butter. Sear roast on all sides,
being sure to completely dry
the meat first with paper
towels, or it won't brown. Put
vegetables in bottom of Dutch
oven just large enough to hold
vegetables. and roast. Put
roast on top of vegetables.
Pour wine marinade over all.
Cover and bake at 325 degrees
two or three hours or until
meat thermometer registers
160 degrees.,

Americans and a large per-

Mrs, Shirley Bright Boody, .a
• dietitian.
Mrs. Boody decided seven
years ago that she was going
to do something about this
confusion. •
"I had so many people ask-
ing my advice -- both con-
cerned persons and doctors —
that I decided to open my own
diet therapy clinic in Beverly
Hills," she said.
