COOKING- CORNER Stretched tuna dishes help food budget By SUSAN DELIGHT The meat substitutes can be expensive unless they are - "stretched" with other ingre- dients. Canned seafood --- such such as tuna and salmon — are among the . substitutes which lend themselves well to stretching. 1'he stretched dishes need not be such ordinary dishes as creamed tuna or tuna salad. Some exotic dishes are in- spired by faraway places. In Italy, Tuna Spinach Frittata is a pudding -like omelet, fried on top of the range. In some areas Maritata isadded to further define omelets which are in- ventively "married" to other regional foods. • One of the•dishes making its appearance in fine Chinese restaurants is "Velvet" -- somewhat somewhat like a little pan- cake with a texture more lige satin on the tongue and a flairor that defies description. TUNA SPINACH FR1'ITATA 14 cup well drained cooked chopped spinach 2 tablespoons soft bread crumbs 3 tablespoons milk 14 teaspoon grated lemon rind % teaspoon salt 1'4 teaspoon drieddill weed iia teaspoon sugar 1 can (16% or 7 ounces) tuna in vegetable oil 4 eggs; slightly beaten 1 tablespoon butter or mar- garine In large bowl mix together „spinach,bread ' milk } lemon rind, salt 'and' sugar. Add tuna and stir until broken into fine flakes. Add eggs; mix well. Melt butter in large skillet. Pour in egg mix- ture and cook without stirring over medium heat three to five minutes, ~or.until set and brown On bottom. Place brief- ly under broiler to brown top. Cut into wedges to serve. Yield:four servings. TUNA VELVET 1 can (6% or 7 ounces) tuna in vegetable oil 2 unbeaten egg whites 2 teaspoons cornstarch 4 egg whites 1 teaspoon cream of tartar 3 cups chicken bi oth Flake tuna in large bowl; add two unbeaten egg whites and cornstarch; mix well. Beat four egg whites with cream of tartar until stiff; mix lightly into tuna mixture. Heat Chicken broth to boiling in large skillet. Drop table- - spoons Of tuna mixture into boiling broth. Cook about five minutes turning once. Re- move with slotted spoon. Serve with Chinese vege- tables. Yield: four servings. TUNA VELVET FRITTERS pok tuna -egg white; fax., ture in two cups salad oil in- stead of broth. Heat oil to 365 degrees F. Drop mixture by tablespoons into hot oil and cook until golden brown, about three minutes, turning once. Drain well on absorbent paper. Serve with Light Sauce (Note) and Chinese vege- tables. Yield, four servings. (Note) LIGHT SAUCE We cups chicken broth 2 tablespoons sherry y teaspoon salt 4 teaspoons cornstarch 1 teaspoon soy sauce % teaspoon ginger Mix chicken broth, sherry, salt, cornstarch, soy and ginger in :saucepan. Cook (stirring constantly) until mixture thickens and comes to a boil; boil one minute longer. Yield:- About 1 and two-thirds cups. In answering her letter, I must say that decorating long dis- tance poses a problem, but will give that advice I think most helpful to make positive decisions. She writes, "My living room is 12 x 19 feet, has four win- dows and two arches and a red brick fireplace in one cor- ner. The walls are gold, the drapes avocado, the carpet dark and light green. I suggest treating the bay windows as one; by that I mean draping the two outside windows, and using a valance to complete the inner area. The 'space between the win- dows is ideal for small, inter- esting pictures. This bay win- dow space is a fitting area for a collection of green house plants and 1 would add one or two on the yellow fireplace.
