SEAFOOD APPETIZER
An exquisite appetizer before a special dinner.
It is most appealing when prepared in real
shells. ,
Ingredients:
7 tbIsp, butter
1/2 Opp raw shrimp (small)
1/2 cup crab meat
1/2 cup scallops, cut into bite -sized pieces
1 tblsp. chopped green onion
2 tbisp. sherry
1/2 tsp. salt
1/1 tsp. freshly ground black pepper
3 tblsp. flour
-7174 cups m
1/2 cup bread crumbs
1/4 cup grated Parmesan cheese
Method:
Preheat oven to 400 degrees F. In a skillet, heat
4 tbisp. of the butter. Add the onion and`Seafood.
Cook for 5 min. Sprinkle with the sherry; salt and
pepper. Melt the rest of the butter in another
pan. Add the flour. Sti* with a whisk until
blended. Add the milk (all at once) to this and
stir vigorously until .the sauce is thickened and
smooth. Fold the sauce into the Seafood Mixture.
Spoon the mixture into buttered shells. Mix
bread crumbs and cheese. Siirinkld over the
mixture in the shells.
Bake 15 min. Enjoy !

1/4 cup butter
% cup boiling water
1/2 cup flour
2 eggs, unbeaten.
Add butter to water. Heat until butter xneits.
Add flour all at once and stir very vigorously
until ball forms in centre of pan, DO NOT USE A
1VIIXER.
Remove from heat. Let stand five minutes;
add eggs one at a time beating after each egg.
Mixture should be stiff. Shape on buttered cookie
sheet by dropping from spoon. (about, size of a
walnut).
Bake until free from beads of moisture about
30 - 40 mins- at 375 degrees F. When cool cut off

FILLING:
1 envelope Dream Whip
1 instant vanilla pudding (3 oz.)
21/2 cups milk
Beat until thick. Chill and .fill cream puffs as
desired .
